  • 1 cup all-purpose flour (spooned and leveled) 1 tablespoon sugar 1 1/4 teaspoons baking powder 1/4 teaspoon baking soda 1/4 teaspoon fine salt 1 cup buttermilk 1/2 cup applesauce 1 large egg 1 tablespoon unsalted butter, melted Cooking spray 1 apple, peeled and diced small (1 cup)

Directions

In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together buttermilk, applesauce, egg, and butter. Add applesauce mixture to flour mixture and whisk until just moistened (batter should have some lumps; do not overmix).

Lightly coat a large nonstick skillet or griddle with cooking spray and heat over medium-high. In batches, drop batter by 1/4 cupfuls into skillet. Sprinkle each pancake with diced apple. Cook until bubbles appear on top and a few have burst, 2 to 5 minutes. Flip pancakes and cook until golden brown on underside, 2 to 5 minutes. Repeat with more cooking spray and remaining batter, wiping skillet clean between batches.

I used almond milk and apple cider vinegar in place of buttermilk, used agave instead of sugar, and added a splash of vanilla extract. The chopped apples messed with the fluffiness of them a little bit, so I only put those in a couple of them and layered them all into a stack so I could have apple chunks AND fluffy cakes. Also made an easy strawberry raspberry syrup to pour over top. Yum!

They are probably the best pancakes we have ever eaten. Added some spicy sausage patties and maple syrup and we had a very delicious breakfast. We also froze the leftovers but have not tried those yet. I would definitely do these for company for breakfast/brunch.

The diced apples were a nice touch. And I didn't have tons of batter leftover. Will ads this to my breakfast rotation.

Added a 1/2 tsp cinnamon, that might seem like a lot but my kids love it, 1/4 cup wheat and 3/4 white flour and I graded the apples instead of chopping them. They turned out great!!

It was perfect because I had buttermilk and applesauce in the fridge that needed to be used this week. The pancakes were fantastic--light and fluffy. I will add a little cinnamon to the apples the next time I make them. I was out of maple syrup, so I served them with my homemade buttermilk syrup. YUM!! I can't wait to make these for my grandsons.
