- 1/2 cup plus 2 tablespoons sugar

- 2 cups buttermilk
- 4 teaspoons vegetable oil, plus 2 cups for frying
- 2 large eggs, lightly beaten
- 2 cups all-purpose flour (spooned and leveled)
- 2 teaspoons baking powder
- 1/2 teaspoon fine salt
- 4 medium tart apples, such as Granny Smith, cored, peeled, and cut into 1/2-inch-thick rings
Directions
In a medium bowl, combine 1/2 cup sugar and cinnamon. In another medium bowl, whisk buttermilk, 4 teaspoons oil, and eggs. Stir in flour, 2 tablespoons sugar, baking powder, and salt.
In a large, heavy, high-sided skillet, heat 2 cups oil until it registers 375 degrees on a deep-fat or candy thermometer. (The oil should bubble rapidly when a drop of batter is added.) In batches, coat apples in batter and fry until golden brown, about 4 minutes per batch, flipping halfway through. Transfer to a paper-towel-lined baking sheet to drain. Toss apples in cinnamon sugar and serve immediately.

I cook and bake constantly... Seldom any problem...
Yesterday was Shuffleboard... I was out to please and impress.
Thank God I had made cookies and apple donuts also,
because these fritter rings were an awful greasy mess.
Is the buttermilk amount correct, or should it have been 2/3 cup buttermilk?
It came out such a thin, greasy mess. Runny like a too thin tempura.
Greasy.
Not edible.
All had to be discarded.
$4.00 in apples... in the trash...

OMG! Just made these. They are amazing. Imade only half a batch of batter, but it was enough for15 rings and 3 chopped up apple fritters to finish it off. If you like cinnamon, I would recommend adding more as the flavour was very subtle. Will make sgain and again.

What a great coincidence! My son was born 14 years ago today after I went to a folk festival where I just couldn't eat enough of the apple fritters. I had no idea how to make them but now they can be a special treat for the birthday celebration tonight. Thank you!
