Directions
Preheat oven to 400 degrees. In a 10-inch cast-iron skillet, melt butter and 3 tablespoons sugar. Add apple slices, and cook for 5 minutes, stirring occasionally.
In a medium bowl, whisk together eggs, flour, milk, cinnamon, salt, and remaining tablespoon sugar. Pour batter slowly over cooked apple mixture. Transfer skillet to oven. Bake until dark golden brown, set in the center, and puffed around the edges, about 15 minutes. Dust with confectioners’ sugar; serve immediately.

Martha Stewart Member Rating: 4 stars 01/28/2018 This recipe made a delicious pancake, but the next time I make this, I’ll use my mixer with the whisk attachment to whip the eggs to lighten the batter. I love the fact that the apples were cooked in a pan on the stove before adding the batter, then finished in the oven. I may not have discovered this myself but since it was soooooooo hard to make it and enjoy it ... I will criticize it and act like my version is better. So here it is " whaah , whahh , whahh , less eggs more eggs , I like / don't like. ". Apple pancakes are great , stop complaining people. I used egg whites and it was very light not heavy tasting. Maple syrup adds a yummy touch on top.
