Ingredients

  • 2 pricked sweet potatoes 1 tablespoon extra-virgin olive oil 1 thinly sliced small onion 1 stemmed and chopped bunch Swiss chard Coarse salt 1 sliced avocado, divided Cayenne Lemon

Directions

Heat oven to 400 degrees. Bake sweet potatoes until tender, about 45 minutes.

Heat oil in a large skillet over medium heat. Add onion and cook until tender, about 6 minutes. Add chard and cook, stirring, until bright green and wilted, about 5 minutes. Season with salt.

To serve, split potatoes and top each with the greens and 1/2 sliced avocado. Season with cayenne, salt, and a squeeze of lemon.

Maybe the sweet potatoes were too large, but they were the smallest 2 at the store. Other than that, the chard and onions were so simple to make and super tasty.

Our local health food stores (I went to 4, plus 3 regular groceries) don't carry orange-flesh sweet potatoes right now. They only have white-flesh sweet potatoes. Since many groceries miss-label yams as sweet potatoes, I tried this recipe w/ a "red" (orange) flesh yam. It took 2-3x longer to cook. It still didn't finish cooking. It didn't taste as good as even a white sweet potato. I don't know whether to try again or not. They mean sweet potatoes, not yams
