- 6 ripe bananas 2 eggs, beaten 3/4 cup all-purpose flour 3 tablespoons vegetable oil
Directions
In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey.

Martha Stewart Member Rating: 1.0 stars 01/18/2020 Worse ‘Jamaican’ recipe - definitely not Jamaican!! Where are the spices? Nutmeg, vanilla, cinnamon etc.? This is a wannabee. I didn’t even try it. I reduced mine and only added one banana (that’s all I had at home lol). Yes one ! Add more for more flavor and density. I used one egg and added nutmeg, cinnamon, and vanilla flavoring. Those things are what a true Jamaican fritter is made of. I did add a little milk and condensed milk. And after I drained the grease off I sprinkled a little cinnamon sugar on them. I tried make them once and failed horribly. I saw the video and I just made them for the first time tonight. I made a half batch just in case... They came out perfect! Like my Grandmother used too, I added a pinch of pure almond abstract and a bit of confectius sugar to top it off. My four year old and my husband loved it. Thanks Lucinda!
