  • 1 pint vanilla ice cream 2 tablespoons butter 1/2 cup dark-brown sugar 1/4 cup dark or gold rum 3 bananas, peeled, halved crosswise and then lengthwise

Directions

Set ice cream out to soften. Meanwhile, in a large skillet, heat butter, sugar, and rum over medium-low. Cook, stirring occasionally, until smooth and bubbly, 4 to 6 minutes.

Add bananas, and cook, gently swirling skillet, until bananas are just warmed through, 1 to 2 minutes. Scoop ice cream into bowls, and top with bananas and caramel sauce. Serve immediately.

I have a slight revision for kids...instead of the rum use real maple syrup, and top with pecans and real whipped cream infused with vanilla bourbon. This is definately one way I've gotten my children to eat the bananas that they might otherwise consider a bit too ripe. Enjoy!

If entertaining, if you have a small portable gas stove (usually the kind used for camping, etc.) you can prepare this dessert tableside for your guests. Go ahead and flambe the rum, it adds to the excitement of the evening and will surely impress your guests. Please, no requests for nutritional information, this is DESSERT. Of course it's fattening and probably should be eaten on rare or special occasions. You've got a brain, so USE IT.

Just made this! I cut the recipe in half since it was just for hubby and me and I only had 1 very ripe banana! Just delicious and so perfect to satisfy a sweet tooth craving!
