  • 1/2 cup (1 stick) unsalted butter, plus more for pan

  • 1/2 cup sugar

  • 1/4 teaspoon salt

  • 1 large egg

  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup all-purpose flour (spooned and leveled)

  • 2 large eggs

  • 3/4 cup sugar

  • 1/2 teaspoon vanilla extract

  • 1 cup all-purpose flour, (spooned and leveled)

  • 1 package sweetened shredded coconut (7 ounces), 1/2 cup reserved for sprinkling

Directions

For chocolate base: Preheat oven to 375 degrees. Line a 9-inch square baking pan with aluminum foil, leaving a slight overhang; butter bottom and sides of foil (not overhang).

Place butter in a large microwave-safe bowl; melt in microwave. Add sugar and salt; whisk to combine. Whisk in egg, then cocoa and flour until smooth. Spread batter in prepared pan.

Bake just until sides begin to pull away from edges of pan, 10 to 15 minutes (do not overbake). Let cool slightly while preparing coconut topping. Keep oven on for topping.

For coconut topping: In a medium bowl, whisk eggs with sugar and vanilla. Gently mix in flour and coconut (except 1/2 cup reserved for sprinkling).

Drop mounds of mixture over chocolate base; spread and pat in gently and evenly with moistened fingers. Sprinkle with reserved 1/2 cup coconut.

Bake until golden and a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely in pan. Lift cake from pan, peel off foil, and cut into 24 bars.

                What's the difference between making this with shredded coconut vs grated coconut? Would grated coconut be okay to use instead?

                I made these as a special treat for my husband on our 14th anniversary yesterday, and they were a huge hit! They turned out exactly like the picture, and the flavors and textures are addictive! I definitely recommend this recipe to all coconut lovers out there! (I don't even like coconut, and I think they're tasty!)

                Such a shame, I followed this recipe to the letter, and I've ended up with a layer of brownie, and a layer of coconut cake......tastes Ok but after reading the recipe again I believe the "macaroon" topping needs to be made with egg whites, and this is not clarified in the recipe! :( please adjust so others aren't disappointed!

                Obviously the one with the brownie base cannot be used for Passover. I will try the more traditional ones instead of buying 10 cans of the pre-prepared and full of preservatives ones however.

                The written recipe calls for 1/2 teaspoon vanilla extract, but the video calls for 1 teaspoon vanilla extract. Go with the 1 teaspoon vanilla extract - much better. I have also made this with a tablespoon of rum instead of vanilla, and it is nice, too!

                I have to be honest and say, I did not care for these.  I love coconut and chocolate, but these just seemed plain to me, neither layer had much flavor and the texture seemed off as well.  I don't usually post negative comments, if i think that it may in any way be my own fault.  But, I'm pretty sure in this case it wasn't.  They were OK.  I can't say I would ever make them again.

                Sounds delicious. Would love to try it, but I cook a lot for large church groups. Rather than cooking several 9x9 pans, does anyone know if this recipe can be doubled for a 13x9 pan? How does it altar the cooking time or temp?

                These were really fun and easy to make. 
                I saw the video and my batter didn't seem to be as thick  as the ones in the video. I'm pretty sure i did everything correctly. 
                But! They still came out good and they smelled and tasted delicious!
                coconut lovers like my mom loved this but other people in my family didn't seem to like it much. This bar tasted bland on the first bite but i fell in love with it on my second bite.

                I've been looking for this recipe for a very long time. I ate them a few years ago but wasn't able to get the recipe. Love the brownies but my center came out really gooey even when the toothpick had come out clean. I think I didn't bake it long enough before putting the topping on. I will definitely try this again.

                I liked those but I found the coconut topping a little too dry so I made them again but used 1/2 Martha's coconut macaroon recipe, reduced heat to 300 to bake the topping. Baked for 30 mintues . That was much better. Very yummy.

                If you love coconut, you'll really enjoy this recipe.  The brownie is moist with a chewy coconut layer on top.  This recipe is very easy.  I made a double batch in a 9x13 pan, so I baked them for the maximum bake time both times, and they turned out perfectly.  These are really yummy, and I highly recommend it for all coconut-lovers.

                This is a great bar to add for Xmas baking.  It should make a hit as it is not too rich or too sweet. Just right. My husband who loves brownies raved about this one.  Will make again and will pass it on as well.

                Oh. My. Goodness.  I made these today and they were AWESOME!  Had to adjust my cooking time because I already had something else going in the oven t 350 degrees, and my 9" pan was in use, so used a small oblong Pyrex dish.  These were perfectly sweet and the coconut was not overpowering at all.  The coconut mixture was thick, but not hard or tough.  Spoon the flour to measure, don't scoop!  The brownie style crust was a wonderful touch.  Just simply perfect.  Definitely a keeper!!

                This reminds me of a recipe that my mother made when we were kids.....love it. Charliemom1, you might want to check your oven temperature to make sure it's accurate. KatieRuMu, regardless of what you have heard, studies have shown that there is absolutely no difference between the shiny and dull side of the aluminum foil and which side is in or out.

                I thought this was a delicious desert even though I made the foolish mistake of having the shinier side of the foil facing outwards. It was so moist! And I love coconut! My only reservation in that the brownie part isn't too sweet. I might add just a little more sugar next time and there definitely will be a next time! Yummy!

                I actually tried this recipe and it was pretty good.  However, I did use a 8x8 pan instead of a 9 - that may have made a slight difference, but it shouldn't have been drastic.  I'd definitely use this recipe again!

                this is not a good recipe at all. The coconut mixture becomes too hard and is tough.. Maybe cut way back on flour in the coconut mixture (or delete it all together? )

                These were really fun and easy to make.
