Ingredients

  • Vegetable-oil cooking spray 1/2 cup slivered almonds, toasted 2 cups all-purpose flour 3/4 cup confectioners’ sugar 1 1/2 teaspoons baking powder 1/2 teaspoon coarse salt 3/4 cup (1 1/2 sticks) unsalted butter, cold, cut into pieces 1 large egg 1 large egg yolk 3/4 teaspoon pure vanilla extract 1 1/2 cups blueberry jam Almond-Coconut Granola

Directions

Line a 9-by-13-inch baking dish with foil, allowing a 2-inch overhang. Coat with cooking spray. Set aside.

Process almonds in a food processor until finely ground. Add flour, sugar, baking powder, and salt; pulse to combine. Add butter; process until mixture resembles coarse meal.

Lightly beat egg, egg yolk, and vanilla in a small bowl. With processor running, add egg mixture; process just until clumps form. Pat dough into bottom of dish; refrigerate until firm and cold, about 30 minutes.

Preheat oven to 350 degrees. Prick dough all over with a fork. Bake until edges are golden, about 25 minutes. Let cool on a wire rack.

Spread jam over crust; top with granola. Bake until jam is bubbling and granola topping is browned, about 30 minutes. Let cool on wire rack. Lift out, and cut into 2-inch squares.

Martha Stewart Member Rating: 2 stars 07/17/2016 These didn't turn out the way I expected. They were more like blueberry and granola cakes than cookies or bars. Perhaps I did something wrong but the bottom turned out poofy and more like a cake instead of a crust.

Martha Stewart Member Rating: 5 stars 06/27/2013 This is an amazing recipe!! I made this for friends and family and they loved it! They especially thought the bottom was a great mix! I cheated abit and used almond meal and plain caster sugar instead but it still turned out wonderful!

Martha Stewart Member Rating: Unrated 08/03/2010 Am I correct in assuming that the Almond Coconut Granola is not cooked before using in this recipe?

Martha Stewart Member Rating: Unrated 07/13/2010 Ok, I just made this Blueberry Bonanza Bar recipe and it taste ok, but, if you added cream cheese as a layer it would have been even better. Depends on how many calories you're looking for. I really like the ease of making it, very simple!

Martha Stewart Member Rating: Unrated 04/04/2009 These are so good! Just made them yesterday. I used Black Raspberry Jam instead of Blueberry because it's what I had on hand. I added a little bit of extra coconut at the end after I took them out of the oven for the last time... Perfect! Will definitely make again

Martha Stewart Member Rating: Unrated 01/26/2009 Excellent! Loved it. Had a hard time finding blueberry preserve at the local supermarket. My one daughter did not like the coconut but everyone else in the family gave it 5 out 5 stars.
