Directions

Cook rice according to package instructions. Meanwhile, in a large skillet, heat oil over medium-high. Add onion and cook until softened, 5 minutes. Add bratwurst and cook, stirring often, until browned, 6 to 8 minutes. Add collards, season with salt and pepper, and cook, stirring constantly, until collards are just tender, 7 minutes. Stir in vinegar and serve with rice.

    Martha Stewart Member     Rating: Unrated       12/20/2013   Update: We still love this meal but we have started to substitute the meat for a nitrate-free sausage (we were using kielbasa). Still good but not quite the same and definitely more expensive (the meat costs 3x more now).

I was suspicious of it, because it contained no seasonings other than salt and pepper, and we love herbs and spices at my house. But I followed the recipe, and was pleasantly surprised. I used a delicious smoked chicken spicy Italian sausage, and I think that the lack of seasoning in the recipe means the sausage you choose will make or break your dish. We don't care for vinegar so I left it out. The onions sweetened up the collards' bitterness nicely.

To save time, I often chop the onion and collard greens the night before. Also, I use microwave- cook rice instead, which takes just 90 sec.

This was easy and actually quite tasty. I was suspicious of it, because it contained no seasonings other than salt and pepper, and we love herbs and spices at my house. But I followed the recipe, and was pleasantly surprised.
