                My dressing was really runny. I would use half the amount of lemon juice to start and add more as you need it. It was too lemony -- I had to virtually double all the other ingredients to make it less like water. Still runny, but was a good dressing.

Ingredients

  • 1/4 cup freshly squeezed lemon juice (from 2 lemons)
  • 1/4 cup light mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 anchovy fillets, roughly chopped (optional)
  • 1 small garlic clove

Directions

In a blender, combine lemon juice, mayonnaise, Parmesan, anchovy fillets (if using), and garlic; blend until very smooth (the dressing will be thick).
