This is a fabulous salad. While it's definitely not a make-ahead salad, it is easy and quick to make. The cider vinegar will keep the apples from browning and presentation is beautiful. An approx. weight reference for the "small" cauliflower would be helpful because they can vary widely in size. Mine was bigger than "small" because the salad turned out quite dry. It could have used 2x the dressing. Also, this isn't a great make-ahead salad. While the lemon juice kept the apples from turning brown, the cauliflower absorbed all of the dressing overnight leaving it bone dry. But it was a good combo so I will most like try again with a few mods.

  • 2 tablespoons extra-virgin olive oil 2 tablespoons cider vinegar Salt and pepper 1 small head cauliflower 2 thinly sliced Gala apples 3/4 cup torn fresh mint leaves

Directions

In a large bowl, whisk together oil and vinegar; season with salt and pepper. With a mandoline or sharp knife, shave cauliflower into thin slices. Add to dressing along with apples and mint leaves, then toss.
