Ingredients
Ingredients
4 ounces Italian bread, cut in 3/4-inch cubes (about 4 cups) 3 tablespoons olive oil Coarse salt and ground pepper 4 chicken cutlets (each 2 to 3 ounces and 1/2 inch thick) 1 package romaine lettuce hearts (18 to 20 ounces)
1/4 cup freshly squeezed lemon juice (from 2 lemons) 1/4 cup reduced-fat mayonnaise 1/4 cup grated Parmesan 2 anchovy fillets, roughly chopped (optional) 1 small garlic clove
Directions
Make croutons: Preheat oven to 375 degrees. Place bread on a rimmed baking sheet. Drizzle with 2 tablespoons of the oil, and season with salt and pepper; toss to coat. Bake, tossing occasionally, until golden, 12 to 15 minutes; remove from oven; and let cool.
Make chicken: Heat remaining tablespoon oil in a large skillet over high. Season chicken with salt and pepper. Cook until opaque throughout, 1 to 2 minutes per side; remove from skillet and let cool.
Prepare lettuce: Cut romaine crosswise into 1-inch ribbons; wash and dry.
Make dressing: In a blender, combine lemon juice, mayonnaise, Parmesan, anchovy fillets (if using), and garlic; blend until smooth. If preparing this recipe in advance, see storage instructions (below).
If stored in refrigerator, bring chicken and dressing to room temperature. Slice chicken crosswise into strips; toss with croutons, lettuce, and dressing.
Cook’s Notes Croutons can be made 3 days ahead and stored in a resealable plastic bag at room temperature. Chicken can be cooked and stored, covered, overnight in the refrigerator. Store washed lettuce, in a large bowl with paper towels, and dressing, covered, overnight in the refrigerator. Bring the chicken and dressing to room temperature before serving.

Martha Stewart Member Rating: 4 stars 06/16/2019 I see the comments about the nutritional information. Yes, it is in the magazine and here it is: 349 cal 18.6g fat 23.1g protein 22g carb 2.4g fiber Martha Stewart Member Rating: 5 stars 10/06/2017 I made this with my special needs students. We made our own croutons and dressing. So easy, so tasty! The hardest part was figuring out the recipe for 18 people. Martha Stewart Member Rating: Unrated 06/10/2012 I love it. I would never use another one. Martha Stewart Member Rating: Unrated 10/11/2010 This is really tasty, but if you put bacon pieces in there too, its even better! Martha Stewart Member Rating: Unrated 04/30/2008 I'm pretty sure there is nutritional info in the magazine this recipe is printed in. Martha Stewart Member Rating: Unrated 01/05/2008 I agree with Danny. I've often thought how wonderful all MS's recipes are but there are never any NI's on them here or in the magazine. Since I've been on a health program for over a year now, I tend not to prepare any recipes unless I know what I'm up against. Martha Stewart Member Rating: Unrated 01/04/2008 Without nutritional info these yummy recipes are not of great value ...CARBS and cholesterol as well as calories are vital info for some of us who REALLY need these good ideas! No use to me without! Wish it weren't so! Martha Stewart Member Rating: Unrated 12/11/2007 Be sure to use freshly squeezed lemon juice. It absolutely makes a difference. Very nice Caesar Dressing. Yum.Martha Stewart Member
