- 3/4 cup quick-cooking grits 1/2 cup shredded cheddar (2 ounces) Salt 3 tablespoons unsalted butter, divided 1 bunch scallions, thinly sliced 1 chipotle in adobo sauce, seeded and chopped, plus 1 tablespoon sauce 1/2 cup chicken broth 1 pound frozen large shrimp (31 to 35), thawed, peeled, and deveined (tails left on) 1/4 cup lime juice (from 2 limes)
Directions
In a medium pot, cook grits according to package instructions. Stir in cheddar and season with salt.
Meanwhile, in a large skillet, melt 1 tablespoon butter over medium. Add scallions and chipotle and sauce; cook, stirring, until scallions are tender, 4 minutes. Add broth and bring to a simmer. Add shrimp and cook until opaque throughout, 3 minutes. Stir in lime juice and remaining 2 tablespoons butter and cook until sauce is slightly thickened, about 2 minutes. Season with salt. Top grits with shrimp and sauce.

Martha Stewart Member Rating: Unrated 10/12/2013 I've been going crazy with the printing issue too such a waste of paper to have to print 6 pages and have the recipe appear in part on 3 BUT finally solved it----take your curser and scroll down on the bar on the right side of the screen, as you do so another heading bar will magically appear that has a printer icon and voila you can get just the recipe. hope this helps it works for me Martha Stewart Member Rating: Unrated 09/13/2013 There's no print icon on my screen either. I much preferred the old format. I have seen this problem endlessly addressed in reviews and have written one myself. Apparently Martha Stewart website people don't read the reviews or want to make printing a challenge because this would be an easy fix. It is very frustrating. Of course, we could print the whole page but who wants to do that. I used polenta instead of instant grits and white cheddar for cheddar. I looooved this recipe and will be making it this weekend for a dinner party. It really is one of my new favorites. One thing, do yourself a favor and finish this dish with a sprinkling of fresh chopped parsley. It REALLY wakes it up and enhances the flavor. I'll make this again but I think I'll add some thick cut bacon as well.Martha Stewart Member
