Makes 28 squares

Ingredients

Ingredients

  • 14 chocolate graham crackers
  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
  • 3/4 cup light brown sugar
  • 1/4 teaspoon coarse salt
  • 30 milk chocolate peppermint-bark squares (12.45 ounces total), chopped

Directions

Preheat oven to 350 degrees. Line a rimmed baking sheet with a nonstick baking mat or parchment paper. Place graham crackers, sugared-side down, in a single layer on baking sheet with edges touching; set aside.

Place butter, sugar, and salt in a small saucepan; bring to a boil over medium-high heat, stirring to dissolve sugar and salt. Reduce heat and cook at a rapid simmer until mixture reduces and is bubbly and syrupy, about 2 minutes. Pour over graham crackers, using an offset spatula to spread if necessary.

Transfer to oven and bake until bubbling, about 8 minutes. Remove from oven, let cool 3 to 4 minutes, and sprinkle with chopped chocolate. Let cool completely; refrigerate briefly if necessary to set chocolate. Break into pieces and serve.

      Cook's Notes

Peppermint crunch may be stored in an airtight container for up to 5 days.

I’ve made this recipe every year since it came out. It is easy and delicious. I couldn’t recommend it more. If you can’t find the specific ghiradelli squares you need 12.5 oz of half minty white chocolate and half semi sweet. So so so good!!

I did try this at the holiday season and as much as the majority of the recipes are good, I would pass on this one.

So easy and delicious! I made a batch of this for a Christmas party last week. It made a great addition along with the more traditional soda cracker/butter brickle bark! Everyone loved it!
Except my husband. He doesn't care for peppermint. So for his office party this week, I was inspired to make Rocky Road crunch. To the base layer of chocolate graham crackers I added milk chocolate chips, chopped walnuts, mini marshmallows and a sprinkle of white baking chips. Yummy!!

OMG....so easy and so good! Definitely doing these for Christmas. Much less expensive and easier than fudge. I got a no-stick mat at Target. Bought plain white chocolate to melt and bashed up cheap peppermints with a mallet so saved even more that way. Thanks Team Martha!
