- 1 cup all-purpose flour
- 1 cup stone-ground yellow cornmeal
- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon baking powder
- 1/2 teaspoon coarse salt
- 2 large eggs
- 3/4 cup granulated cane sugar
- 6 tablespoons extra-virgin olive oil
- 1 tablespoon finely grated lemon zest
- 1 cup dried cherries
- 1 cup shelled pistachios
Directions
Heat oven to 350 degrees. In a large bowl, whisk flour, cornmeal, coconut, baking powder, and salt.
In the bowl of an electric mixer fitted with the paddle attachment, mix eggs, sugar, oil, and zest on medium speed until well combined. Reduce speed, add flour mixture, and mix until just combined. Fold in cherries and pistachios.
Transfer dough to a parchment-lined baking sheet and pat into a 14-by-4-inch log. Bake until firm and golden, 30 to 35 minutes. Transfer to a wire rack and reduce oven to 325 degrees.
Once cool, transfer log to a cutting board and, using a serrated knife, cut diagonally into 1/2-inch slices. Arrange slices on parchment-lined baking sheet and bake, rotating halfway through, until just golden around the edges, 15 to 18 minutes. Let cool completely.

These were to crumbly, overdone, a waste of ingreadents. I always try Martha Stewart cookie recipes but these are going to go right in the garbage.

Received several of these as a gift from my daughter for Christmas. It had the perfect crunch to the bite. Very sophisticated flavor. I've made biscotti before and they were good. The addition of the corn meal makes a big difference on the plus side for these delicious treats.

Have been making biscotti for over 2o yrs, but thought I'd try a new recipe for a change. This is not a good biscotti. You need to add 1 to 1 1/2 cups more flour as it is too wet and sticky to handle otherwise. Also, you have to put it on a floured board and be sure to grease the pan if you don't have parchment paper. It did not have much flavor and the cherries detracted from the taste. Served it at breakfast to my family and friends. Basically, no one liked it. :o(
