- 6 cups macadamia nuts
- 1 one-pound box graham crackers
- 8 tablespoons (1 stick) unsalted butter, melted
- 10 ounces bittersweet chocolate, finely chopped
- 1 1/2 cups packed sweetened shredded coconut
- Caramel for Cookies
Directions
Heat oven to 350 degrees. Spread macadamia nuts on a baking sheet, and bake until golden, about 10 minutes. Set baking sheet on a wire rack to cool.
Line an 11-by-18-inch baking pan with parchment paper. Using a food processor or rolling pin, finely crush graham crackers. Place in a medium bowl. Stir in melted butter. Press mixture into the bottom of prepared baking pan in an even layer. Sprinkle the chocolate over the graham crackers. Sprinkle the coconut over the chocolate. Sprinkle the reserved nuts over the coconut.
Using a microwave or double boiler, heat the caramel until liquid. Drizzle caramel over macadamia nuts. Bake until golden, about 20 minutes. Transfer pan to a wire rack to cool. Cut into 3/4-by-1 1/4-inch pieces.

The reviews don't sound very good.
Can you substitute the coconut with something else? Also, Is part of the recipe missing like some have stated?

Wish I had read reviews first! I wanted to make a bar cookie that I could cut and serve. As many stated, it never set up. I was worried from the first layer...it didn’t seem that thee was enough moisture to hold graham cracker crumbs together and I was right!!! Should have made 6 layer cookies... waste of ingredients !!!!

This is the notorious recipe that almost ruined my Christmas baking in 1999. I thought that since I had great ingredients and pretty clear instructions it couldn't possibly fail. I was 19 at the time, and I had been cooking for my family since the age of 11. The bars never set. The caramel fused and turned glass like. The only way I was able to salvage just over $30 of ingredients was to take a mallet to break up this monstrosity and use it as a topping for ice cream. I found there was no way to fix this recipe, and I didn't want to try again because it was so expensive to begin with. That's when came to the realization: Martha Stewart isn't trustworthy with my hard-earned dollars. There were thousands of good cooks and millions of recipes that worked, why can't hers?

The bars didn't hold up at all, and were overly sweet, so I wouldn't add any more caramel.

I made the recipe EXACTLY as written - - delicious - - also used a sensible amount of caramel (the recipe does state "drizzle").
Also, "congo" - "offensive"?!? - SERIOUSLY!?!? Come on!!!

I haven't tried these cookies but can you use melted caramel candies to drizzle over the top? Sounds good to me.

As an aside, these aren't the traditional Congo Bars (which are a version of a Blondie bar) but rather use graham crackers for the base. To make them really extraordinary, try making your own graham crackers to use in this recipe. It really makes all the difference.

I don't believe sweetened condensed milk is used in this recipe. The bar is held together by a combination of melted butter, melted chocolate chips, and melted caramel.

very disappointed! spent a lot of time and money on ingredients to get inedible cookies. The amount of the caramel for the cookies must be wrong. I followed the directions exactly and even when I was pouring the caramel over the tray of cookies I thought "wow that's a lot of caramel". I ended up with a hard crunchy mess, now a day later you can't even bite through the bars they are so hard. Please review your cookie instructions and make sure they are correct.
