Ingredients

Ingredients

  • 1 tablespoon olive oil 1 medium onion, halved and sliced 1/8 teaspoon ground nutmeg 4 cups reduced-sodium chicken broth 1/3 cup rolled oats 1 1/2 pounds broccoli, florets separated, stems peeled and cut into 1/2-inch rounds Coarse salt and ground pepper

Directions

In a large saucepan, heat olive oil over medium-low heat. Add onion, and cook until softened, 5 minutes. Add nutmeg; cook until fragrant, 30 seconds.

Stir in broth, 1 1/2 cups water, oats, and broccoli. Season with salt and pepper. Bring to a boil; reduce heat. Simmer until broccoli is tender, 5 to 10 minutes.

Puree soup in batches, filling blender halfway. Return to pot. Season with salt and pepper.

I have always used left over mashed potatoes to thicken but, as I use soy products the flavor is altered. Your recipe is now on next weeks menu and shopping list! On more time, THANK YOU!!!raf

Turned out delicious! My boyfriend, who doesn't care for broccoli, enjoyed it because it had a bit of a kick to it. I also added shredded carrots that I had for the salad with had with the meal. Thought it added a nice color to the soup.

But the oatmeal really does work as a thickener and gives the soup a nice color. It's very mild, so there needs to be some spice or strong flavors in the rest of the meal. Overall, though, it's quick, nutritious, and pleasant.

We all need to LEARN the food value of what goes into our mouths! DON"T DO IT, EDF!! Leave out the little numbers at the bottom of your recipes. Everyone should be able to read a recipe and KNOW that Broccoli is good for you, that oatmeal helps reduce cholesterol and is a GOOD fiber, that reduced sodium chicken broth is also GOOD,

I won't even try the recipes on the site or in the Everyday Foods or the MSL magazine because they lack nutritional info. I'm on a diet and hey, I'm working too hard to risk it on a "treat!" It's so frustrating because I am a long-time MSL fan and am finding myself drifting farther and farther away just because of this one stupid thing! I think before you guys add a new "service" you need to give a little our way!

I went to make this last night and was unable to find the nutmeg so to give it some flavor I added minced garlic, paprika, chili powder, and red pepper flakes. Turned out delicious! My boyfriend, who doesn’t care for broccoli, enjoyed it because it had a bit of a kick to it. I also added shredded carrots that I had for the salad with had with the meal. Thought it added a nice color to the soup.
