  • 1 1/2 cups vodka 2 English cucumbers; 1 peeled and coarsely chopped, 1 left whole 1 lime, cut into 8 wedges 2 bottles (750 mL each) sparkling water 1/2 to 1 cup Ginger Simple Syrup

Directions

Put vodka and chopped cucumber in a nonreactive container. Refrigerate 1 hour. Strain; discard cucumber. Refrigerate, covered, until ready to use, up to 2 days.

Using a vegetable peeler, shave the remaining cucumber lengthwise into wide strips; discard seeds.

Fill eight tumblers with ice. Add 3 cucumber strips and 3 tablespoons infused vodka to each glass. Squeeze, then drop, a lime wedge into each. Top with sparkling water; stir in 1 to 2 tablespoons syrup.

I cut up the cuke and sprinkled it with red pepper flakes and put it in a cheesecloth with the vodka for about an hour, strained it, then added some mint in the ginger simple syrup I made. The little bit of spice from the red pepper flakes was perfect and I highly recommend trying it! Also, instead of soda water I used some Prosecco we had around. I will make this again!

Seriously all of my friends thoroughly enjoyed this and it was fun to make. I followed the directions to the t. One tablespoon of simple syrup was the perfect amount.

In my experience infusing vodka with cucumber -- it takes longer than an hour of infusion to get the flavor really in there. I think we left ours infusing for a couple of days. Then throw out the cucumber -- do not be tempted to eat it! This is a great summer cocktail... and cucumber vodka is great with so many different mixers. Experiment :)
