I does seem like this could be a great recipe. I used kale instead of the spring greens which balanced the steak nicely. However, the dressing was what ruined the potential to this salad. Very tart and didn't compliment the salad itself. If I ever make it again, I will not be using the dressing recommended.

Although at face value, this recipe might seem very appealing, the results are far from wooing. I really think the steak overpowers the delicate taste of the lettuce, and the sour cream even weighs this down more so. In all honesty, I believe this recipe is a contradiction of itself: the heavy heartiness of steak with the delicate nuances of light lettuce. This recipe is just much too complex with too many things going on at once. Less is more, and this is the total opposite.

Ingredients
Ingredients
- Sirloin steak
- Red onion rounds
- Sour cream
- Extra-virgin olive oil
- Chopped chipotle chile in adobe
- Lime juice

Directions
Grill steak and onion. Thinly slice steak. Make a dressing with equal amounts sour cream and olive oil, and season with chopped chipotle chiles and lime juice. Toss together steak, onion, greens, and dressing; top with pepitas and jicama or cucumber.
