  • 1/2 pound leftover cooked spaghetti
  • 1 tablespoon extra-virgin olive oil
  • 1/4 - 1/2 cup prepared tomato sauce
  • Grated Parmesan cheese
  • 2 carrots, peeled and sliced thinly lengthwise

Directions

Toss pasta with tomato sauce just to completely coat. Heat a 12-inch cast-iron skillet over medium-low heat. Swirl in olive oil. Add pasta in one layer. Do not move – leave it to crisp to a golden brown on one side, about 10-15 minutes. Turn onto plate. Top with grated Parmesan and cut into wedges. Serve with carrot slices on the side.

                Can you use spaghetti sauce with meat in it or will the meat get to done?

                I have not made this yet but I do make a similar version that I have made for years and it started way back when I was a child and my father made this for us when we were children; (and I make it for my son now) and in a cast iron skillet best yet!  I will make this version this weekend and follow-up with a review.  Thanks Lucinda.  :)

                Nice!!   ...but I must admit that I was frying cheddar cheese slabs in a skillet 30 years ago.   Love that flavor and the pasta enhances the flavors!  Thanks for reviving a memory!
