Ingredients

  • 8 medium russet potatoes (about 4 pounds) 1 head peeled garlic cloves (about 15) Coarse salt 1 1/2 cups milk 1/2 cup butter (1 stick), cut into small pieces

Directions

Peel potatoes and quarter lengthwise; cut crosswise 1/2 inch thick. In a 5-quart saucepan, combine potatoes and garlic cloves; cover with water (about 8 cups) by 1 inch. Add 1 tablespoon salt.

Bring to a boil; reduce heat, and simmer until potatoes are easily pierced with the tip of a paring knife, 25 to 30 minutes.

Drain; return garlic and potatoes to pan. Stir over medium-high heat until dry, 1 to 2 minutes. Remove from heat.

In a small saucepan, bring milk to a boil; pour over potatoes. Add butter and 1 teaspoon of salt. Mash until smooth and creamy.

I thought it would be too garlicky at first but it's perfect! I didn't read the other reviews but I can't believe it only has three stars. I follow it to the T and, like I said, it is perfect! The texture turned out perfectly without being stringy, clumpy or sticky and took less time to cook than it says here. I will say as someone who really enjoys garlic and spicy things that I was slightly disappointed by how mild this recipe is. However there is still a great garlic flavor to the potatoes and the garlic cloves really add to the dish. Still, good enough to make again.

I only used 2 cups of milk as I was unsure if I had the correct amount of potatoes. They turned out perfect! I mixed them in a kitchen aid mixer and they came out perfectly smooth. I highly recommend this recipe!!
