I love this simple syrup. I grate the ginger rather than slicing and use about double the amount suggested in the recipe because I am a bit of a ginger addict. Very easy to make and tastes great in coffee!

Good and simple recipe, but DON'T throw out the ginger. In fact, add more ginger, cook it about 15 minutes longer (stirring a few times), lay the ginger out to dry and coat it in sugar. Voila! Ginger candy!

Ingredients

- 1 cup sugar
- 1 cup water
- 1 piece (about 10 inches long and 4 ounces; or use several small pieces) fresh ginger, peeled and cut into very thin rounds
Directions
Bring the sugar and water to a boil in a medium saucepan over medium-high heat, stirring to dissolve sugar. Add ginger; bring to a simmer. Remove from heat, and let steep 30 minutes. Pour syrup through a fine sieve into an airtight container; discard ginger. Refrigerate up to 1 month.
