- 4 zucchini Olive oil 4 skinless salmon fillets (4 ounces each) Grainy mustard Orange marmalade
Directions
Quarter zucchini and brush with oil. Season zucchini and salmon fillets and broil on an oiled rimmed baking sheet until salmon is opaque throughout, about 5 minutes. Combine equal parts mustard and marmalade, brush on salmon, and broil 1 to 2 minutes more.
