  • 1 tablespoon olive oil 1 medium onion, halved and thinly sliced 1/2 teaspoon dried oregano 1 can (14.5 ounces) whole peeled tomatoes in puree 1 pound green beans, trimmed Coarse salt and ground pepper

Directions

In a large skillet with a tight-fitting lid, heat oil over medium-high. Add onion and oregano, and cook, stirring frequently, until lightly browned, 2 to 3 minutes.

To skillet, add tomatoes and their puree, breaking up tomatoeswith a spoon or your fingers; stir to combine. Add green beans, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper, and bring to a boil. Reduce heat to medium-low; cover and simmer, stirring occasionally, until green beans are soft, about 30 minutes. Serve.

I came across this recipe while searching for a way to get my husband to eat more vegetables. Green beans are one of the few veggies he eats. We are all fans of this recipe. It is so easy to make and leftovers are easy to warm up. It is one of my fast and easy go to recipes. Love it.

This is a lot like a traditional Greek recipe that my Greek friend gave me. 5 pounds green beans, cut into bite size if you like parsley, chopped onions to taste mint - dried or fresh 2 pounds canned plum tomatoes with basil In large, oven-proof pot, cook onions in olive oil. Add parsley and cook. Add mint and tomatoes. Squash tomatoes. Add beans. Stir. Put in 325 degree oven. Cook 5-6 hours. Serve with Italian bread.

Great recipe! I halved the amount and used a red onion and a little bit more tomatoes. I only used 1/4 tsp of salt. Will definitely make again!
