I used Cod instead of Halibut because there wasn't any available. I followed directions but the fish still seemed a bit raw, so I baked it again for an additional 10 minutes but this time on its own. I think this has been my least favorite meal since I wasn't 100% confident about cooking the fresh veggies together with the fish...Taste was "ok", but I did saturate it with lemon juice... I used a different white fish than halibut, because it's hard to find right now and very expensive. There are other healthy and safe white fish to use. We loved the dijon dressing on the fish.

Directions
Heat oven to 400 degrees. Arrange greens and beets in a small baking dish. Drizzle with oil, season with salt and pepper, and toss to coat.
In a small bowl, whisk oil and mustard. Season halibut with salt and pepper and place on top of greens. Spoon over mustard sauce and cover with parchment-lined foil. Bake until greens are wilted and fish is cooked through, about 20 minutes. Squeeze with lemon.
