  • 1 1/2 pounds beef chuck, cut into 1-inch pieces 1/4 cup all-purpose flour 2 cans (14.5 ounces each) diced tomatoes with green chiles Coarse salt and pepper 3/4 pound small potatoes, halved 1/2 pound frozen peas and carrots, thawed

Directions

Preheat oven to 375 degrees. In a large heavy pot, toss beef with flour. Stir in tomatoes, 1 teaspoon salt, 1/2 teaspoon pepper, and 4 cups water. Bring to a boil over medium-high, transfer to oven, and cook 1 hour. Stir in potatoes and cook until beef and potatoes are tender, about 1 hour more. Stir in peas and carrots and let sit 5 minutes before serving.

I will definitely be adding this to my regular cold weather meal line-ups for those days where I don't have time for a more involved stew. The two changes I made were adding half a chopped onion (since I had some already prepped) and subbed one of the diced tomatoes w/ chilies for fire roasted tomatoes w/out chilies, only because I wasn't sure how [filtered]y it would be. Next time I will do both cans Muir diced toms w/ medium chilies though as recipe calls for since mine were not [filtered]y.

I have made pot roast all kinds of ways. This recipe is by far my favorite. I was skeptical that it would be flavorful, but it sure was. Even my son said it was delicious. I made it exactly as the recipe says. It is just a simple no fuss pot roast with just enough flavor. I paired it with warm corn bread too. Definitely will be making this again and again! Thank you!!!!!

One more thing I did, I like a larger chunk of carrot so purchased the frozen peas and a bag of carrot slices. It was very easy to come together, my husband had two big hearty bowls.

I used a large can of the tomatoes with chilies rather than two small cans. It was delicious, the house smelled wonderful and inviting. I made a honey cornbread to go with this dish. I'd rate it 5 stars. I really enjoy Sarah's quick and easy meals. I do think if I had small children I would eliminate the chilies and just use plain chopped tomatoes.

I served it with cornbread. I was pleasantly surprised that it called for just a few ingredients. One word of caution: be sure to use canned tomatoes with chilies that are very mild. I happen to love spicy food, so it was not a problem. If I had made it for my grandsons, they would not have been able to eat it. This is going to be one of my go-to recipes.
