- 2 cups all-purpose flour

- 1/2 teaspoon ground cinnamon

- 3 large eggs, separated, room temperature
- 2 cups buttermilk, room temperature
- 8 tablespoons (1 stick) melted unsalted butter, plus more for waffle iron
- 1 vanilla bean, split and scraped
Directions
Grease waffle iron with a small amount of melted butter, and heat. In a large bowl, sift together the flour, sugar, baking soda, baking powder, cinnamon, and salt.
In a separate bowl, whisk together egg yolks, buttermilk, melted butter, and vanilla-bean scrapings. Pour into dry mixture, and combine.
In a medium bowl, beat egg whites until stiff but not dry. Fold whites into batter.
Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid, and bake 3 to 5 minutes, until no steam emerges from waffle iron.
Transfer cooked waffles to a baking sheet; place in an oven set to low heat, about 200 degrees, while using remaining batter.

I really enjoyed this recipe. Quick, easy to make and delicious. Worked great for a week night supper. Not too complicated for a weekday breakfast either. The brown sugar added an interesting dimension.

My boyfriend said these were the best waffles he's ever had. We used vanilla bean paste for the vanilla bean: one tablespoon=one vanilla bean. I warmed my buttermilk the slightest bit in the microwave and had no problem with the butter clumping. When I folded in the egg whites I added one third of the whites first to lighten the batter before folding in the rest so that the heavy batter would not cause them to deflate. Sooo good!

I've been making these since the magazine came out. Absolutely the best waffle recipe! I often use 1/2 nutriflour to make them a little healthier and the family doesn't even notice.

These are the BEST waffles!!! They even freeze well and I reheat them in the toaster. There is one glitch though, the melted butter always hardens and lumps up when added to the milk. So I slowly warm the milk and butter in a saucepan over very low heat until combined, being careful not to heat too much as I don't want to scramble the eggs!! I'm sure if my buttermilk was room temp this wouldn't happen, but this is an easy fix. I've folded in fresh blueberries as a last step with yummy results!

This recipe is amazing! Delicious waffles! And so easy to make!!! I topped them off with whipped cream flavoured with Martha Stewart's homemade pumpkin pie spice mix from the November Living issue. Perfection!

I have been using this Martha Stewart recipe for several years. They are the best waffles ever! My husband and I have been dieting, but he wants a really good cheat this morning so he asked for waffles. I couldn't find the recipe on my computer, but here it is again. For the person not finding buttermilk, you can take 1 cup of regular milk and add in 1 tbsp of white vinegar. Google it and you will find the exact way to do it. I will be making them that way this morning too.
