  • 2 pounds lean ground turkey 1 cup panko (Japanese breadcrumbs) 1/4 cup finely chopped carrots 1/4 cup finely chopped zucchini 1/4 cup finely chopped onion 2 large eggs 2 tablespoons Italian seasoning 1 tablespoon coarse sea salt 2 tablespoons olive oil 3/4 cup homemade or store-bought low-sodium chicken broth

Directions

In a large bowl, mix turkey, panko, carrots, zucchini, onion, eggs, Italian seasoning, and salt until well combined; form into 1-inch balls.

Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning, until browned, about 7 minutes.

Add 1/2 cup chicken broth; cover and reduce heat to low. Cook until liquid is almost completely absorbed, about 7 minutes. Add remaining 1/4 cup broth and increase heat to medium; cook, uncovered, until liquid is absorbed. Serve.

Also used garlic salt instead of regular salt. I didn't feel like the veggies cooked very well, so will shred or pre-cook them next time. Also, finished cooking them in pasta sauce with half of the broth first. Great flavor!

I used turkey stock instead of chicken broth. Other than that I followed the recipe. We loved them and I'll definitely make them again. Next time I'll remember the carrots but I'll still add the peppers and use the turkey stock.

Make the double batch as the recipe suggests because everyone will love them. My Greek Mother-in-Law who is an exceptional cook, gave them rave reviews as did my 6 year old daughter. I personally prefer them a bit spicier, but my family (including my three-year old) thought these were fantastic. The carrot and zucchini added nice texture and color to the meatballs. I halved the recipe but kept the veggie content the same, and they still came out great. These would work with a wide variety of side dishes. I do agree with another reviewer that they were too salty. Next time, I will cut the salt in half.

I added some garlic and a pinch of red pepper flakes, but followed the recipe otherwise. (And to those commenting on salmonella - good lord. If you are making these with your children, clearly you can make sure they wash their hands afterwards. This risk of sickness is miniscule compare to the to fun and satisfaction of helping make a delicious dinner for their family.)

They are so delicious, low-carb friendly, and pretty simple to make. I always make them for dinner when we have overnight guests - and they are always a huge hit. They also go well with a simple steamed veggie or a green salad. Oh, and they're better the second day! Don't forget to save some for your lunch.

I did not have coarse sea salt, so substituted with table salt and used half the amount called for in the recipe (because the same volume of table salt is twice as salty as coarse sea salt).

Jessica Alba told Martha that she lets her small child help with mixing and rolling the meatballs. I would caution anyone who wants to do this to be aware of a problem that could result. Small children may not wash their hands as well as they should after handling raw turkey, or raw ground beef. Be aware of E coli or salmonella contamination that could could cause serious illness in the child or adult.
