  • 1 pound spaghetti 1/2 pound bacon, sliced crosswise into 1/2-inch pieces 3 large eggs 1 cup grated Parmesan cheese, plus extra for serving (optional) Freshly ground black pepper

Directions

Bring a large pot of water to a boil over high heat and cook the spaghetti. Meanwhile, in a large skillet, cook the bacon over medium-low heat until just crispy, 8 to 10 minutes. Skim off some of the fat. Drain the pasta, add to the bacon in the pan, and toss to combine.

Whisk together the eggs, cheese, and pepper in a small bowl. Pour into the pasta, and combine thoroughly. Serve immediately with extra grated cheese, if desired.

I believe I drained the bacon grease and or water a little to much, as there wasn't much sauce to go around on the noodles, and I even used 1/2 cup of half and half with the eggs. But that didn't stop it from being a good meal. :) The fun thing about cooking is that you can always experiment around a bit to get things "just right". This dish went well with Roasted Brussel sprouts, salad and garlic bread. Mmm Mmm Mmm...

It appeared I had "nothing in the house to eat" but I always have these simple ingredients on hand was able to make a great supper for my kids, which they actually requested the leftovers for lunch today, that never happens! This is going into my recipe box, it's a keeper!

    Martha Stewart Member     Rating: Unrated       01/15/2012   This is so simple and so delish....I drained most of the bacon fat and used the rest to brown a little garlic and wilt some spinache....before adding the pasta and egg cheese mixture....This is a great recipe for a quick tasy meal....we have five boys and one little girl and this is a croud pleaser in our family. This is such a simple recipe my 10 year old son can make it...I wouldn't pay attention to the complaint....

It is one of my husband's favorite dishes so I have tried several recipes and this is easily the best and simplest; perfection. Occasionally, I will throw some frozen peas into the pasta water for the last 2 minutes of cooking to add a veggie. I find veggies far yummier when they're covered in "goo" as well. :)

Being recently retired due to medical reasons I find myself watching a lot of cooking shows and falling in love with cooking! I just saw this particular episode today and thought it looked yummy and easy. I made it tonight. I added more fresh parmesan cheese and a little flat leaf parsley to the top before serving. It not only looked beautiful, it tasted wonderful! Thank you Lucinda for another winning recipe!

Quick and easy but I just might suggest to bring the eggs to room temperature prior to preparing the recipe. Although my pasta was hot and freshly made, the dish seemed to cool down rather quickly. I had to heat it up in a skillet and, of course, it changed the texture. Still delicious though, in fact, the "leftovers" are "what's for dinner" tonight with a salad and other miscellaneous leftovers in my fridge. Thanks LSQ!

My husband is very fussy so when he came into the kitchen he asked what I was making I told him, and if you don't like it make yourself a sandwhich. He loved it!!! I didn't tell him how it was made... he might've freaked out over the sort of raw eggs....but just like you said it cooked up nicely in the hot spaghetti noodles. plus i buy organic eggs so feel that they are a bit safer.

I think it began to go wrong when, as directed, I whisked the Parmesan cheese in with the eggs. It created a thick, pasty blob, impossible to toss with the pasta. I had to add tons of milk to try and make all that cheese into a sort of creamy sauce. I think the magic of television helped out with the results in the video, because I followed the recipe letter by letter and certainly didn't get the same results!
