I think next time I will just do the cucumber and radish and thin slice the radishes on a mandolin. Worth a try if you are looking for something light and new to try with dinner. I wasn't sure how this was going to turn out, but really liked it. I would definitely recommend using the English cucumber (there are much less seeds) instead of a regular one.

Directions

Arrange mango, cucumber, and radishes on a platter.

Whisk together lime zest and juice, oil, and honey. Season with salt.

Drizzle dressing over salad, and season with salt.
