- 1 tablespoon unsalted butter 1/2 cup pure maple syrup 2 teaspoons pure vanilla extract 1/2 teaspoon ground cinnamon Coarse salt 2 cups walnuts (6 ounces)
Directions
Preheat oven to 375 degrees. Melt butter in large skillet over medium heat. Stir in maple syrup, vanilla, cinnamon, and 3/4 teaspoon salt. Bring to a simmer (mixture should be frothy), about 3 minutes. Add walnuts, and toss to coat using a rubber spatula. Cook, stirring, until sauce is syrupy and bubbly, about 3 minutes.
Transfer walnut mixture to a parchment-lined baking sheet, and spread into a single layer. Bake until walnuts are caramelized, about 10 minutes. Transfer sheet to a wire rack. Stir, and let stand until cool and hardened, about 30 minutes.

Martha Stewart Member Rating: 5 stars 01/02/2018 These were a hit! I disagree with the previous salt comment. I actually increased the salt from 3/4 t to 1 t. It would be flat without it. After tossing the walnuts I took them off the heat and continued to toss them in the coating as it cooled a little and thickened. This provided a better coating on the nuts. Right after baking, I tossed them by handfuls into some cinnamon sugar for a final pretty and delicious coating. I made these for Christmas and they were so popular I made another double batch! Whipped this up with ingredients already on hand and then transferred to a baking sheet lined with wax paper rather than parchment. Not sure if that's why my oven was practically on fire when I took them out early, but they turned out beautifully and were a delicious addition to my normally bland and boring lunch salad.
