Ingredients

Ingredients

  • 1/2 cup unsalted butter, (1 stick), softened
  • 2/3 cup packed dark-brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 1/4 cups all-purpose flour, sifted
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon baking soda
  • 1 cup semisweet chocolate chips
  • 1 cup raisins
  • 1 cup pecans, coarsely chopped

Directions

Preheat oven to 350 degrees. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, about 3 minutes. Add vanilla and eggs; mix until well combined.

Sift flour, salt, and baking soda into a medium bowl; add to butter mixture on low speed until just combined. Stir in chocolate chips, raisins, and pecans.

Roll dough into 2 1/2-inch balls, then flatten to 1-inch thick. Transfer to baking sheets lined with parchment. Bake cookies until golden brown, about 20 minutes. Let cool on sheets on wire racks. Cookies can be stored in an airtight container at room temperature up to 3 days.

Hello, just a little thing, the correct expression in French is "nec plus ultra", but the recipe looks great!

I always add extra flour, a little bit at a time, when I make this recipe. When I follow the recipe exactly, the dough is way too runny. The extra flour makes it turn out exactly as it does in the picture.

I tried this recipe today; chilled the dough for 45 minutes and used a 2 oz scoop. I substituted 1/2 cup raisins and 1/2 cup craisins (toasted the pecans too), The bake time is too long-I would take them out at 15 minutes tops. I ended up with 20 cookies and they were large cookies.

Perhaps chilling the dough would work out to be better. The batter was thin. 'Thought perhaps the amount of flour should be increased. Delicious flavor.

A cup is 8 oz a mug would be too much. A china teacup that sits on a saucer usually is 6 oz if that helps you any.

I recommend cutting the baking time down to around 15 minutes. My first batch was burned and hard, but after cutting down the baking time, they turned out chewy and tasty.
