- 2 green plantains 1/2 cup vegetable oil, for frying Coarse salt Mojo, for serving
Directions
On a work surface, cut both ends off plantains; score skin lengthwise in 3 places on each plantain. Wrap in paper towels, and microwave on high until tender, about 7 minutes. To test for doneness, insert the tip of a paring knife. Let cool slightly.
Cut each plantain crosswise into 1-inch pieces; peel and discard skins. Place plantains cut-side up between two sheets of parchment paper. Using the bottom of a bowl, press down to flatten into a disc. Repeat with remaining plaintains.
Heat 2 inches of oil in a large saucepan over medium-high heat until it registers 350 degrees on a deep-fry thermometer. Add plantains in batches, being careful not to over crowd. Fry until golden brown and crispy, about 1 minute. Transfer to a paper towel-lined baking sheet; season immediately with salt. Serve immediately with mojo.
