  • 4 cups Old-Fashioned Quaker Oatmeal
  • 2 cups all-purpose flour
  • 1/2 cup packed dark-brown sugar
  • 1 cup pecans, chopped
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups (3 sticks) unsalted butter, melted
  • 2 teaspoons pure vanilla extract
  • 2 cups raisins
  • Zest of 1 lemon
  • 1/2 teaspoon ground cinnamon
  • Nonstick cooking spray

Directions

Preheat oven to 350 degrees.

In a large bowl, add oatmeal, flour, sugar, pecans, baking soda, and salt; stir to combine. Add melted butter and vanilla and stir to incorporate; set aside.

In a small saucepan, combine raisins, 1/2 cup water, lemon zest, and cinnamon. Bring to a boil over medium heat, and immediately reduce heat to a simmer; continue cooking for 2 minutes. Let cool slightly. Transfer mixture to the bowl of a food processor; process until almost smooth. If mixture is very liquid, strain through a fine mesh strainer, discarding liquid.

Spray a 9-by-13-inch baking dish with cooking spray. Transfer half the oat mixture to baking dish and press down, using your hands, to form an even layer. Using an offset spatula, spread raisin mixture over oat layer. Top with remaining oat mixture, pressing down to form an even layer.

Transfer to oven and bake until golden brown on top, 35 to 45 minutes. Let cool completely before cutting into 2-inch squares. Oatmeal-raisin squares may be stored, wrapped in plastic wrap, for up to 5 days.

                I am just sure this recipe is missing the EGGS.  Did anyone see this actually made on the show? 
                I admit I haven't made it yet....I thought I would check the comments first.  Obviously an omisson in the recipe.  I wonder who proofreads? This is so similar to the recipe on the Quaker Oat box for Oatmeal cookies....1/3 the butter and 1 C less oatmeal and a couple other small differences.  Check inside the Quaker box lid. One of my favorite. MY mother made them over 50 yrs ago! Happy cookies!!

                I made these substituting chopped dates for the raisins. They came out great. Easy to make and I usually have these ingredients on hand for a last minute treat.

                Made these today, and what a disappointment!  Dry, crumbly and not very flavorful.  I am sad that I wasted almost a pound of butter on cookies even my kids won't eat.  Not worth the effort at all.

                I'm not sure why so many comments complained that theirs crumbled up, inedible. Mine came out perfect, just like the photo. I did pack the oats in, and I let them cool overnight. They firmed up beautifully. The only thing I would change is more filling. I used cranberry, yum!

                I made these last night. Easy and delicious - I added raisins, cranberries, dreid apricots and mixed them all in! I love the persons comments to try apple butter. These are delicious.

                Fabulous!  These are super as lunch box treats for my kids.  I make a few batches, cut, wrap individually, freeze, and grab as I need them.  Last well for ages this way. We also like to use apricot, sometimes cranberry/raisin mix, and cherries. Another thing we've done is to replace some of the butter with canola oil (lately doing 1c canola oil, 1/2c butter) and they are still really tasty.  Noone in my family noticed the substitutions.  Fabulous recipe, and so versatile!

                Made this several times. Here is how I did it. Very happy with the results. Perfect to take camping.
                Used whole wheat flour. Used store bought organic apple butter for filling. Beat an egg and added it after the butter. Made it in muffin tins and still got 24 perfect servings. 2 tbsp oatmeal mix pressed down. 1/2 tbsp filling. 2 tbsp oatmeal mix on top, press it down. bake 30-35 minutes (until golden brown). Next time I am going to add some cinnamon to the oatmeal mix.

                Ours came out SOOOO good!  We messed up though, we used 1 cup of brown sugar instead of 1/2 cup. We used roasted unsalted sunflower seeds instead of pecans. We also made another sub. dried cherry's and currents for the filling instead of raisins. Ours came out perfect. It did crumble more than I thought it would. However thats because we didn't wait for it to cool all the way. It tasted so good still warm out of the oven. They did firm up a little after they cooled off all the way.

                I wish I would have read the coments on this recipee before I made it what a waste of good oatmeal and other stuff this was! So dry and crumbly and sweet not good1 WHAT a WASTE I can not believe Martha even has this on her web site or made it on TV no wonder the guy who will eat anything only ate one bite! I would have thrown up!

                It was interesting that a simple oat bar inspired 39 comments!  About a third had the recipe turn out dry, a third enjoyed it and a third doctored it up to the point it wasn't even recognizable!  Thanks for a good laugh, everyone!  Oh, and suzismom, thanks for finding out about the book.  I wanted it more than this recipe!

                Since I wil be having company, I made these today.  After reading another comment, I even added two eggs thinking that would keep it together. I also spread melted chocolate chips on top.  Turned out looking good, but definitely dry and crumbly.  It seems to be lacking something.  I will not make this recipe again.

                I called Quaker Oats today and asked where to buy the receipe book that Martha gave to all of the audience members. They told me that the show was an old show and that the book was no longer available. They are in hopes that it will be republished in the near future.

                I made some substitutions to use them as breakfast bars -- three quarters applesauce to oil and 1/2 agave nectar to 1/2 brown sugar.  I thought they were good but prefer similar recipes with jam filling instead of raisins.

                I used half butter half applesauce and for the fruit I  used dried blueberries, cranberries and cherries and it turned out wonderful. I just had a square in a bowl iwth vanilla yogurt and it was a very tasty mid-morning snack.

                I have now tried this recipe three times, and think I have it.  I use 3/4 c butter (1 1/2 sticks) and 3/4 c applesauce.  I found this way it sticks well, tastes good, and doesn't have as much fat.  I tried it with all butter, and it was crumbly, but tasted great.  I tried it with almost all applesauce, and it was almost too mushy, and I didn't like the taste.  When I just split the butter half and half, it seemed to be the best batch so far.  I used dried blueberries and pears.

                I used Bobs Red Mill Ground Flaxseed which you can substitute 3 to 1 for fat in any recipe for one stick of butter (which I do often, adds a ton of fiber and cuts the fat, amazing!  I never do it for all of the fat.) but the mixture looked so dry that I also added some apple sauce.  They taste good but are very crumbly.  I was also wondering about adding an egg and will try that next time.  It does seem that they may have left some liquid out of the recipe.

                Add an egg to this recipe to stop the crumbles.  Beat the egg first I used NO nuts.  I used prune puree instead of rasins.  Totally yummy!!  You can substitue other fats if butter is not for you.  Applesauce can be used if you can stand the taste (I can't).  I will only make these once in a while and so will not worry about the butter.   This recipe is available all over the web just search for oatmeal bars and you can get different variations.

                I made these using dried cranberries, which was very tasty, however I had about a cup and a half of crumbles in the pan when I cut them. I let them cool completely. I will try again, like the applesauce idea to cut the fat and half whole wheat flour.

                Loved this BUT it was a crumbling mess.  Just cutting them caused them to crumble.   Use a saucer when eating!!!!!!

                Yummy!  I let mine cool completely before cutting them and taking them out of the pan.  They did stay together, but I had about 1/4 cup of free oats in the pan.  They are very crumbly.

                Mine were a disaster, totally fell apart,  and with no food processor, my raisin filling was lumpy.  Any ideas on what to do with the crumbs? Alot of nummy pecans and oats and butter.

                These turned out great!  Moist, delicious!  A big hit with my kids, both helping to make and eating :)  I gently cut them in squares after about 10 minutes of cooling time, and then left them alone until they were completely cool.  For those of you whose came out dry- do you have a oven thermometer? did you let the oat mixture soak with the butter mixture while preparing the raisin filling?

                My batch came out dry as well -- I couldn't even pick up a "sqare" from the pan because they crumbled. I followed ingredients/directions and baked the minimal time in a glass baking dish. Any ideas?

                Applesauce can often be substituted for butter or oil using a 1:1 ratio. One canuse a cup of applesauce instead of a cup of butter. My experience is that it is a bad idea to replace all of the butter or oil with applesauce. The texture is just not right. My suggestion is to experiment. Replace a one stick of the butter with applesauce. If that works, try replacing two sticks. You might be able to away with just using a half-stick of butter and the rest as applesauce. But maybe not...

                These look sooo good, but I am allergic to pecans.  If you don't want to risk using and losing 3 sticks of butter (Alexis's chocolate chip cookies) use part butter and part butter flavor shortening or a baking quality margarine. I may try these with almonds or hazelnuts which I am not allergic.

                I made them with 50% whole wheat flour and 50% all-purpose flour, well I took a little less whole wheat. They turned out great. It is OK to bake with butter - just eat less.

                I just made these tonight but substituted 1 1/4 cups unsweetened applesauce   1/4 cup melted butter and they turned out great.  I would probably up the applesauce by 1/4 cup in the future to make the oatmeal part a little more moist.  I also substituted dried cherries for the raisins with very good success!!  I highly recommend this recipe with the substitutions!

                I couldn't stand to use that much butter, either!! Applesauce is a great idea (I've used that in other recipes to lighten themup and it works great - I just had to use less because it is much moister than butter, oil, etc.).  I just made them tonight using whole wheat flout and substituting real maple syrup for the brown sugar and they turned out GREAT.  My husband, daughter and nephew loved them.  The raisin filling is delicious!

                Loved this BUT it was a crumbling mess.  Just cutting them caused them to crumble.   Use a saucer when eating!!!!!!
                ANY SUGGESTIONS ??

                Yummy!  I let mine cool completely before cutting them and taking them out of the pan.  They did stay together, but I had about 1/4 cup of free oats in the pan.  They are very crumbly.  


                    
                Okay this is my second batch. I also gently cut and then let cool completely and they did not crumble. However, 3 sticks of butter, WOW. Is there a healthier alternative?

                Mine were a disaster, totally fell apart,  and with no food processor, my raisin filling was lumpy.  Any ideas on what to do with the crumbs? Alot of nummy pecans and oats and butter.

                These turned out great!  Moist, delicious!  A big hit with my kids, both helping to make and eating :)  I gently cut them in squares after about 10 minutes of cooling time, and then left them alone until they were completely cool.  For those of you whose came out dry- do you have a oven thermometer? did you let the oat mixture soak with the butter mixture while preparing the raisin filling?

                My batch came out dry as well -- I couldn't even pick up a "sqare" from the pan because they crumbled. I followed ingredients/directions and baked the minimal time in a glass baking dish. Any ideas?  


                    
                Applesauce can often be substituted for butter or oil using a 1:1 ratio. One canuse a cup of applesauce instead of a cup of butter. My experience is that it is a bad idea to replace all of the butter or oil with applesauce. The texture is just not right. My suggestion is to experiment. Replace a one stick of the butter with applesauce. If that works, try replacing two sticks. You might be able to away with just using a half-stick of butter and the rest as applesauce. But maybe not...

                These look sooo good, but I am allergic to pecans.  If you don't want to risk using and losing 3 sticks of butter (Alexis's chocolate chip cookies) use part butter and part butter flavor shortening or a baking quality margarine. I may try these with almonds or hazelnuts which I am not allergic.  


                    
                Why so many recipes have increased saturated fats, sodium, eggs and carbs?  It would be nice to see these amounts noted in each and everyone of Martha's recipes.  I enjoy her recipes, but they seem unhealthy.  thanks

                I made them with 50% whole wheat flour and 50% all-purpose flour, well I took a little less whole wheat. They turned out great. It is OK to bake with butter - just eat less.  


                    
                made bars but did not melt the butter put it in the food processor cold with the rest almost the same recipe as canadian date squares one of my favorites just use rasins instead of dates.   very good

                I just made these tonight but substituted 1 1/4 cups unsweetened applesauce   1/4 cup melted butter and they turned out great.  I would probably up the applesauce by 1/4 cup in the future to make the oatmeal part a little more moist.  I also substituted dried cherries for the raisins with very good success!!  I highly recommend this recipe with the substitutions!  


                    
                I also tried the recipe and it was totally dry and fell apart. Did someone forget the eggs??? I put everthing back in a bowl, added 2 eggs and rebaked it!!

                I followed the recipe, but it was very dry and didn't stick together.  They crumbled when they were cut.  I like the applesauce idea to cut the fats.
                Have any ideas what could have gone wrong?

                I couldn't stand to use that much butter, either!! Applesauce is a great idea (I've used that in other recipes to lighten themup and it works great - I just had to use less because it is much moister than butter, oil, etc.).  I just made them tonight using whole wheat flout and substituting real maple syrup for the brown sugar and they turned out GREAT.  My husband, daughter and nephew loved them.  The raisin filling is delicious!

                Question, were the eggs in this recipe forgotten?  How does it stick together?  What about substituting blueberries and adding eggs and instead of 3 sticks of butter use 2?  Do you think that would work?  I haven't made this yet but am thinking of doing this.  Comments?

                QUESTION TO deedala FROM MAREKA,  HOW  MUCH  APPLE SAUCE DID  YOU  USE TO  REPLACE THE   2 STICKS OF  BUTTER ?     I AM USING CHUNKY HOMEMADE APPLE SAUCE AND FLAX OIL  AND WHEAT GERM BRAN  


                    
                How much applesauce did you substitute?   Did the applesauce work well?  I don't want all that butter, but do the oats stick together and bake well, with the applesauce?  


                    
                Yes, I want to try it with an applesauce,rice bran oil, and butter mixture!  Really cannot justify the use of 3 sticks of butter!
