- 2/3 cup matzo cake meal
- 1/3 cup potato starch
- 1/4 teaspoon salt
- 9 large eggs, separated
- 1 cup granulated sugar
- Juice and zest of 1/2 orange
- Juice and zest of 1/2 lemon
- Passover Powdered Sugar
Directions
Heat oven to 325 degrees with rack in center. Whisk together matzo cake meal, potato starch, and salt; set aside. In the bowl of an electric mixer fitted with the whisk attachment, beat yolks and 3/4 cup granulated sugar until thick and pale yellow. Gradually add dry ingredients, alternating with juice and zests.
In the clean bowl of an electric mixer fitter with the whisk attachment, beat egg whites until foamy. With machine running, gradually add remaining 1/4 cup granulated sugar and the salt. Continue beating until soft peaks form. Remove from mixer. Gently but thoroughly, fold egg whites into yolk mixture in two additions.
Pour into a nonstick 10-inch tube pan. Bake until golden, about 1 hour. Remove from oven, and invert onto a narrow necked bottle. Let stand until cool, about 1 hour, before removing pan. Will keep covered at room temperature for up to 3 days. Just before serving, dust with powdered sugar.

At home we really appreciate sponge cakes. I havent tested one like this before. The one I know of is a portuguese recipe very easy to prepare and with very common ingredients (just eggs, sugar, flour and baking powder). You can check such recipe on the link below.

Matzo cake meal can be found in the passover section of the supermarket. It is not the same as regular cake flour because matzo cake meal can only be used for Passover desserts. Maybe you can try this recipe with cake flour if you don't celebrate Passover.

Is Matzo cake meal the same as Cake meal? I went to the store and could only find Cake Meal made with whole wheat. It did not say made with Matzo. Help!
The cake looks delicious and wold love to try it. Being a member of Weight Watchers it is very Weight Watcher friendly.

Matzo cake meal is used during the holiday of Passover, because regular flour is not used during Passover. Hope this ansers your question.
