- 1/3 cup unsulfured molasses (not blackstrap)
- 2 tablespoons vegetable oil
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon coarse salt
- 3 cups rolled oats (not quick-cooking)
- 1 cup sweetened shredded coconut
- 1 cup pecans, roughly chopped
Directions
Preheat oven to 325 degrees. In a large bowl, whisk together molasses, oil, cinnamon, and salt. Add oats, coconut, and pecans; stir gently with a rubber spatula until oats are completely coated. Transfer to a rimmed baking sheet and spread in an even layer. Bake, stirring occasionally, until oats are lightly browned, 25 to 30 minutes (watch carefully, as mixture burns easily). Let cool completely on sheet on a wire rack, 30 minutes.

DELISH! It was gone in under 1 day! I did however tweak it, because I wanted it a tad sweeter, so I added about 1/4 cup more molasses. I also wanted more cinnamon. So I doubled it. I had to bake mine close to 45 minutes. But, I'm 7500' up. That may alter the time.
I have made this twice now. I doubled the batch. Two cookie sheets. Because, we live it so much!

Ummmm never buying Granola again! Didn't have coconut so instead I used Craisins, Honey Roasted Pecans, and Almond slivers, and a teensy bit more cinnamon! I'm a little worried about how to store it, but it taste amazing!! Thank you Martha 😊

I have made this recipe dozens of times, usually as written, and I think it's great. It's not very sweet, which I like. Over the years I've also substituted flaked coconut for the shredded coconut, doubled the oil, added raisins or dried cranberries in place of the cherries if I didn't have cherries, added a quarter-cup of pepitas, added a bit of honey in addition to the molasses -- nothing ruins it. But it's excellent just as written.

This recipe is delicious! It is a great way to use up items in the pantry and is economical. I also added dried cranberries. Next time I will use more cinnamon.
