I never made better pork in my entire life. Tender, well seasoned very tasty dish. I went with a pork loin, cooked for the same time. Needed tbl butter, tbl EVOO ... perfect!!

I have made these at least 6 times since seeing the recipe in the Spring, they really are that good! The recipe itself is so simple but the taste is amazing. Corn tortillas are a must, flour just doesn't complement the crispy pork pieces the way the corn does. We also add avocado, cheddar cheese and sour cream, in addition to the onions and I serve with a side of Cilantro rice from this site.
This recipe is a staple in my house this summer!

Cook's Notes
In a heavy skillet, toast tortillas over medium until browned in spots. Or, wrap a stack of them in parchment-lined foil and warm in a 400-degree oven for 5 minutes.

Directions
In a large cast-iron or heavy straight-sided skillet, cover pork with 1/2 inch water and bring to a rapid simmer over medium-high. Cook, turning pieces occasionally, until water evaporates, about 45 minutes. Season with salt and pepper and continue to cook, turning pieces frequently, until crisp and browned on all sides, about 12 minutes. Serve carnitas with tortillas, onion, cilantro, guacamole (if desired), and lime wedges.
