                I make viniagrette similar to these, but I use much less evoo.  To Dijon I add a splash of red wine vinegar, minced or dry garlic to taste, S & P & then I slowly whisk in  evoo until emulsion forms.  Sometimes I add sugar & honey, depending what the rest of meal consists of.

  • 2 tablespoons red-wine vinegar
  • 1 teaspoon Dijon mustard

Directions

In a small bowl, whisk together vinegar, mustard, garlic, and olive oil. Season with salt and pepper.
