                Calder mentioned it was difficult to get greens dry without a salad spinner.  I know a way.  After a water bath, spread wet greens down the center of a bath towel.  Fold towel lengthwise over greens, top and bottom.  Then fold in the short ends.  Place towel inside washing machine, folded ends against the inside of the washer.  Put washer on spin only (making sure there will be no rinse!).  Greens will come out perfectly dry.

Ingredient Checklist

Boston lettuce

1 red onion

Sliced cucumber

(Whatever vegetables sound good, maybe not the cucumber)

Dressing

1/2 tablespoon each of whole-grain, maple, and Dijon mustard

A little honey

Some lemon juice

2 tablespoons olive oil

Salt and pepper

(Maybe a fresh herb minced as well)
