I've never had leeks before, but I really wanted to try this recipe. I made minor adjustments, but it turned out great! Since I'm vegetarian, I did a TVP "bacon" recipe in place of real bacon and sauteed the leeks in some a bit of butter. I also split the recipe and did 2 pans so that each well only had one egg (4 eggs per pan), and I added a sprinkle of sugar and thyme when cooking down the leeks to bring out the flavor a bit more. The flavors are beautiful, the eggs pair with the leeks well, and it was a very easy breakfast that I'm really hoping I can reheat juts as easily in a microwave at work .

- 6 slices bacon
- 8 cups sliced leeks
- 8 eggs
- Thinly sliced chives
Directions
Cook bacon until crisp, then crumble. Saute leeks in bacon fat until soft. Make 4 wells, break 2 eggs in each, and season. Cover and cook until just set, 5 minutes. Top with bacon and chives.
