Directions

Preheat oven to 350 degrees.

Heat oil in a medium skillet over medium heat. Add beef, shallot, lemongrass, red-curry paste, and garlic. Cook until browned, about 5 minutes.

Stir in ketchup, fish sauce, 10 basil leaves, brown sugar, and mustard. Reduce heat and simmer for 15 minutes.

Place baguettes in oven and cook until toasted, about 2 minutes. Fill each baguette with about 1 cup beef mixture, and top with remaining 10 basil leaves, mango, and jalapenos. Serve immediately.

    Martha Stewart Member     Rating: 2 stars       11/01/2018   I was expecting to love this, as I like all of the flavors in it. However, it was overpoweringly, cloyingly sweet from the ketchup. I would try it again using a combination of tomato sauce and tomato paste in place of the ketchup. I might also reduce the amount of sauce ingredients by a quarter or a half, as it was pretty soupy.

I live in Seattle so I am not able to got to this sandwich shop on a regular basis. I was so thrilled to watch the MS episode featuring this very same sandwich. I am even more thrilled to be make this recipe and enjoy this yummy sandwich on the west coast
