- 1/4 cup mayonnaise

- 1 to 2 teaspoons fresh lemon juice
- 1/2 teaspoon prepared horseradish
- 2 ounces plus 2 more ounces thinly sliced smoked salmon, coarsely chopped
- 1 tablespoon chopped fresh parsley
- Bagel chips, for serving
Directions
In a food processor, combine mayonnaise, cream cheese, capers, red onion, lemon juice, horseradish, and 2 ounces smoked salmon. Process until smooth, about 20 seconds. Transfer to a small bowl and stir in remaining 2 ounces smoked salmon. Top with fresh parsley and serve with bagel chips.

I omitted the mayo, horseradish and fresh parsley and didn't use the food processor. I used 2 pkgs of cream cheese, whole jar drained un-rinsed capers, small diced shallot, small diced red onion, lemon juice and 2 foil bags of smoked salmon flakes (Starkist? I think) and a sprig of dill finely chopped and hand whipped mixed it. I found the processor made it in too much of a paste. Then I formed it into a cheese ball using the dill fronds for plating, surrounded by cocktail crackers. People couldn't get enough!!

This was just ok. I've had much better versions. We thought the fish was sort of overpowered by the condiments. Maybe that's the point, but we happen to enjoy the flavor of smoked salmon.

This spread is AMAZING. I substitute freshly grated horseradish for the prepared horseradish, and add extra to taste. I've tried it with the prepared horseradish, but I find using fresh gives the spread a firmer texture, which I prefer.
