Directions
Set a steamer basket in a saucepan with 2 inches simmering water. Add carrots. Cover and steam until tender, about 12 minutes. Transfer to a food processor, along with garlic, cumin, ginger, cinnamon, cayenne pepper, tahini, and lemon juice. Season with salt and pepper. Process until smooth, about 1 minute, adding up to 2 tablespoons water, if necessary.

I have been asked for the recipe every time and today I am actually sending this link to them. I do increase the amount of spices, tahini & oil. It needs something more to "kick it up" and GeorgiaRenee has some excellent suggestions. This recipe on its' own is far too bland and healthy does not need to equal bland! Then I pureed with the remaining ingredients, though I added more cumin, cinnamon and grated ginger. I also added more tahini and a little more evoo to make it more creamy. Made some adjustments and this was great - first I roasted the carrots in a little evoo until caramelized and soft. Then I pureed with the remaining ingredients, though I added more cumin, cinnamon and grated ginger. I also added more tahini and a little more evoo to make it more creamy.
