Sticky Orange-Glazed Chicken

Sticky Orange-Glazed Chicken

  • 8 bone-in, skin-on chicken thighs Coarse salt and ground pepper 1 cup thawed orange juice concentrate 1 cup ketchup 2 tablespoons light-brown sugar 4 teaspoons white-wine vinegar 4 teaspoons Worcestershire sauce 2 teaspoons hot sauce

Directions

Preheat oven to 450 degrees, with rack in upper third. Season chicken with salt and pepper and arrange, skin side down, on a rimmed baking sheet. Bake until deep golden brown and cooked through, 45 to 50 minutes, flipping halfway through.

Meanwhile, in a medium saucepan, combine 1 teaspoon salt, juice concentrate, ketchup, brown sugar, vinegar, Worcestershire sauce, and hot sauce. Bring to a simmer and cook until mixture has thickened, 18 to 20 minutes.

Heat broiler. Transfer chicken to a large bowl, add glaze, and toss to coat. Drain off fat from sheet. Return chicken to sheet and broil until sauce is bubbling and chicken is dark brown in spots, 1 to 2 minutes.

Substituted orange juice instead of the concentrate and other ingredients as noted in yesterday's post. SO easy and just the right amount of tang. This will easily become a favorite. Looking forward to trying on other things like shrimp, or baby back ribs!

Differences: Oven temp: 350 degrees NOT 450 degrees Vinegar: 2 teaspoons (tsp) not 4 teaspoons and NOT Tablespoons (Tbsp) as previous posts have suggested W-shire sauce: 2 tsp not 4 tsp and NOT Tbsp Hot sauce: 1 tsp & maybe more depending on personal taste. Disappointed that the printed recipe didn't match video. Still looking forward to making this tonight.

    Martha Stewart Member     Rating: Unrated       10/26/2012   i havent tried this recipe although it does look good. im curious why oj concentrate is used instead of fresh orange juice or even carton orange juice for that matter. concentrate is sooooo high in sugar and kind of a bastardation of food! it seems like a shame to recommend to people that they use something that is so unhealthy when a healthier option is so easy to come across.

You won't need to compensate for volume, because I had a good amount left over in the bowl after tossing the thighs in it.

I cooked the chicken over indirect heat on the Bbq, about 40 minutes, tossed it in the sauce and put it back on the Bbq for a few more minutes. I usually don't really like chicken at all thought it was good, but my husband really enjoyed it. It's a do over!

I made 2 small alterations. I used the entire can of concentrate because I did not have another use for it -- and i liked the extra orangy flavor. I also sprinkled meat with S&P AND garlic powder. Kids really loved it. Sauce recipe makes more than what you need. I recommend storing 1/2 before you toss with chicken to use for another night.

It was a little too orangy, and not quite spicy enough. I think I would halve the orange concentrate and double the hot sauce. You won’t need to compensate for volume, because I had a good amount left over in the bowl after tossing the thighs in it.

Very yummy. I cooked the chicken over indirect heat on the Bbq, about 40 minutes, tossed it in the sauce and put it back on the Bbq for a few more minutes. I usually don’t really like chicken at all thought it was good, but my husband really enjoyed it. It’s a do over!
