Strawberry Cake

Ingredients

Ingredients

  • 6 tablespoons unsalted butter, softened, plus more for pie plate
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup plus 2 tablespoons sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract
  • 1 pound strawberries, hulled and halved

Directions

Preheat oven to 350 degrees. Butter a 10-inch pie plate. Sift flour, baking powder, and salt together into a medium bowl.

Put butter and 1 cup sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy, about 3 minutes. Reduce speed to medium-low; mix in egg, milk, and vanilla.

Reduce speed to low; gradually mix in flour mixture. Transfer batter to buttered pie plate. Arrange strawberries on top of batter, cut sides down and as close together as possible. Sprinkle remaining 2 tablespoons sugar over berries.

Bake cake 10 minutes. Reduce oven temperature to 325 degrees. Bake until cake is golden brown and firm to the touch, about 1 hour. Let cool in pie plate on a wire rack. Cut into wedges.

      Cook's Notes

Cake can be stored at room temperature, loosely covered, up to 2 days.

This is absolutely the best strawberry shortcake. I gave it five stars. I also only used 2/3 cup of sugar instead of 1 cup. My husband loves it also. I use cake flour when baking cakes, it gives a much lighter and fluffy texture. I think I'll try fresh pineapple the next time.

I have made this 4 times in 2 months. I had no milk the first time and I used an equivalent amount of mayonnaise instead. It was delicious! I make it that way every time now.

                THE perfect summer cake.
I've made it 3 times already this summer and will be making it again for visitors this weekend. A simple recipe, similar to strawberry shortcake, but more elegant. I serve it with barely sweetened whipped cream topped with a few fresh berries. It's delicious. I'm sure I will eventually try it with other kinds of berries and it will be terrific. But for now I can't stop making it just as it is. A terrific summer cake.

I don’t know why this recipe only has three stars. I’ve been making it for years and I find it excellent. Guests always love it and I serve with a little whipped cream on the side. Sometimes I even mix up the fruit based on what I have laying around in my fridge- it’s the perfect recipe for fruit that is on its way out. Just watch the baking time. I tend to start checking on it 45 min in because it can get too dry too quickly. I also bake this often in a springform pan.

I made the cake substituting brown sugar for half of the sugar (but not all). I used a square corning-ware cake pan. This pan is larger than a pie pan, so the cake came out thinner resembling a coffee style cake. Thinking about it, I realized that nuts would go well with this style cake. But since this cake doesn't have nuts in the recipe, I decided to make a strawberry topping for the cake. This topping would go on before I served it (so the cake was already cool). I combined sliced strawberries (a dab of sugar or sugar substitute to control any tartness) with strawberry preserves and added chopped walnuts. This way I could enjoy the nutty flavor and my spouse, who doesn't eat nuts, would not have the fruit topping. If you really like the cake sweet, you could probably also add a little powdered sugar on the top. But honestly, I think the cake and the strawberries are sweet enough. I also enjoy a little whipped cream too! I made it look so pretty! This cake is not very hard to make. Its nice for a little dessert!

The aroma is pure deliciousness! The cake is cooling now and I'll have it this evening. One disappointment -- the strawberries are buried under the cake! I placed them lightly on top of batter, did not push into batter. But I'm sure just because of the aroma, the cake will be delicious. I'll try again another time.

This cake is so simple yet so divine. I originally made it to accompany a nice bottle of rosé champagne and my family rapidly devoured the entire thing. My father-in-law is a diabetic, so I substituted butter with greek yogurt and used 2/3 cup of sucralose and 1/3 cup sugar. His whole family loved it (and they're french and not easy to please!). I've used raspberries too and most recently I added lemon juice and used wildberry confiture in place of berries. It always turns out perfect!

This cake is utter perfection. I have made it twice, and both times I used a springform pan that was lined on the bottom with parchment paper and buttered generously. Once I made it with strawberries and the other time I made it with two packages of fresh raspberries. Both were utterly fantastic and my family wants me to make this frequently when fresh berries are available.

I've made this cake twice with fragrant Gariguette strawberries and the smell filling our appartment while it cooks is just divine! I would love to have an accurate metric conversion for the ingredients as my second attempt didn't come out quite right using the spoon and cup measures I can get here in France. Anyone? (Ate it all up anyway!)

I've mad this cake many times. It works great in a 10" pie plate or a 9" deep dish pie plate. Also is wonderful with an assortment of berries. Favorite is blueberries, raspberries and blackberries. Make sure your berries are dry. I sprinkle some of the sugar on before I put it in the oven and then some after it comes out and is still hot. A little whipped cream on top makes this a family favorite!

This cake has so much going for it: it smells heavenly when it is baking, is a great way to use up a large number of strawberries fast or salvage a basket that is not perfect enough to serve fresh and it absolutely scrumptious alone or with whipped cream. It also keeps really well, mine was loosely covered for five days and the last piece was as moist and delicious as the first!

I made this yesterday and it was great! A previous poster was right on the money when they compared it to angel food cake meets pound cake- couldn't have described it better. My guests loved it and thought it tasted just like strawberry shortcake. Because we didn't have any milk, I used half and half mixed with water. There was no problem with this. I'm a beginner baker and this recipe was easy and turned out nice.

This is VERY easy to throw together, took like 10 minutes, if that, and it was in the oven. Better yet, it's so delicous! It's a strawberry shortcake but so much easier! We ate it with freshly whipped cream and it was perfect.

Oh, and if you're tempted to cut back on that 2 tbsp of sugar sprinkled on top, don't! I thought it seemed like a lot of sugar for sprinkling on, but it made the top of the cake so tasty.

Anyone?
