                I made these for Father's Day. They were good, not great. Parmesan was not the best choice of cheese. A melting cheese would be better. I made the Italian version with cooked ground sirloin that I had in the freezer. Hot sausage would have been more flavorful. The broiler made the topping a little crisp which added texture but they really lacked flavor.

                I just made the Vietnamese pork filling variation last night. It was simply delicious! Can't wait to try the lamb filling!

1 tablespoon finely grated lemon zest

1/2 teaspoon crushed red-pepper flakes (optional)

1/2 cup finely grated Parmesan cheese

Vietnamese Pork Filling

2 tablespoons chopped fresh cilantro leaves

1 teaspoon minced garlic

1 tablespoon minced lemongrass

1 tablespoon minced fresh ginger

1 tablespoon minced shallots

  • 1 bag mini bell peppers

  • 2 tablespoons chopped fresh mint

Directions

Mix ground meat with rice, salt, and respective flavorful ingredients. Spoon filling into each half of the mini bell peppers, then broil on a baking sheet on the center rack until meat is cooked, about 8 minutes.
