Ingredients

Ingredients

  • 2 sweet potatoes (about 2 pounds total), peeled and cut into 1/2-by-2-inch sticks 2 tablespoons olive oil Coarse salt and ground pepper 1 tablespoon fresh lemon juice

Directions

Preheat oven to 450 degrees. Divide potatoes between two rimmed baking sheets; toss with oil, and season with salt and pepper. Arrange in a single layer, without overlapping. Roast, tossing once, until tender and starting to brown, 25 to 30 minutes.

Sprinkle with lemon juice; season with salt and pepper, if desired. Toss to coat.

Try cutting the recipe in 1/2 and spread the sweet potatoes on one baking sheet (instead of two). Then place that sheet on the lowest rack in the oven. I have found that oven "frying" potatoes on the lowest rack gets the outsides of the potatoes nice and crisp.

I followed this recipe exactly and the fries never became crisp. After cooking for at least 1/2 hour longer, they were still mushy. I guess I'll have to go back to my fried receipe.
