Ingredients
- 1 tablespoon olive oil 1 large yellow onion, diced large 2 cloves garlic, minced Salt and pepper 3/4 pound sweet Italian sausage, casings removed 2 sweet potatoes (1 pound total), peeled and diced medium 4 cups chicken broth 3/4 cup small pasta shells 4 cups roughly chopped mixed greens, such as kale and Swiss chard Grated Parmesan, for serving
Directions
In a large pot, heat oil over medium-high. Add onion and garlic and cook until onion is translucent, about 6 minutes; season with salt and pepper. Add sausage and cook, breaking up meat with a wooden spoon, until browned, about 5 minutes.
Add sweet potatoes, broth, and 2 cups water and bring to a boil. Add pasta and cook 3 minutes less than package instructions. Reduce to a simmer, add greens, and cook until pasta is tender and greens are wilted, 4 minutes. Serve with Parmesan.

Martha Stewart Member Rating: 5 stars 10/23/2018 I make this recipe over and over. I use vegetable stock instead of chicken broth because I think it has more flavor. I also cook my gf pasta separately. And last night I cooked the sweet potatoes on low for a long time in the broth and I think it made the soup even better. Martha Stewart Member Rating: 5 stars 02/06/2018 My husband and I love this soup. I use chicken sausage and whole wheat pasta, and my husband can't tell the difference. I also use all chicken stock or broth instead of water as it actually makes a big difference in flavor. I take the leftovers to work for lunch so I usually cook the pasta separate and add it when serving to keep the pasta firm. Really great flavor! Martha Stewart Member Rating: 5 stars 01/13/2018 I've made this recipe at least a half dozen times now, and I absolutely adore it. I'm actually making it tonight to entertain! I use spicy Italian chicken sausage, butternut squash instead of sweet potato (only because it's conveniently prepackaged), and I add spices such as thyme and basil to taste. Martha Stewart Member Rating: 5 stars 03/07/2016 Really good, really easy~ I was looking for a recipe to use up some sweet potatoes and kale from my CSA box and found this soup one. Wow - how delicious and nutritious this turned out to be. I grilled the sausage to get some of the fat out, but that wasn' t really necessary. Martha Stewart Member Rating: 3 stars 11/02/2014 Awwww, yeah. This soup is delicious, nutritious, beautiful and amazing!!! Such a great fall soup. Will be making it all winter too!! I used hot Italian turkey sausage. YUM! Martha Stewart Member Rating: Unrated 10/25/2014 Wow! This was awesome! I made it with mild Italian sausage and kale. Really hearty! Will be adding this to my fall/winter soup rotation. Martha Stewart Member Rating: Unrated 12/16/2013 I made this over the weekend and it was SO GOOD! The prep was quick and the active cook time was minimal, really all I had to do was wait for the soup to boil and the noodles to get al dente. I will definitely be making this again, it was hearty and perfect for winter. Martha Stewart Member Rating: Unrated 12/09/2013 I thought it was terribly bland. I added a handful of Italian seasonings, pinch of red pepper flakes for heat, pinch of nutmeg, 3 bullion cubes, 1/2 a tin of tomatoes, and 2 cans of tomato sauce (I was out of tomato paste). I also left out the pasta so it was gluten free. After all that, it was delicious. Martha Stewart Member Rating: Unrated 12/05/2013 Delicious! Even my husband who says he doesn't like sweet potatoes had seconds. I used spinach 'cause that's what I had on hand. I also forgot the parm until I had finished the bowl! Added a squirt of sriracha for a little heat. Will absolutely make this again! Martha Stewart Member Rating: Unrated 12/05/2013 This soup is easy to make and absolutely delicious. I realized I had forgotten the Parmesan cheese after I finished my bowl. I never missed it. Martha Stewart Member Rating: Unrated 02/10/2013 I have made this soup a couple of times. It is soooo good! I shared with the neighbors and it was such a big hit they shared it with their daughters and they have made it several times. This is such a "keeper"! I'm copying the recipe right at this moment as someone else wants a copy. I prefer spicy things so I used the hot Itialian sausage and so glad I did. DON'T let the "greens" scare you if you are not used to using them. It really adds to this soup as does that little bit of parmesan. Martha Stewart Member Rating: 5 stars 01/24/2013 Found this recipe through the Everyday Food Digital Magazine and thought I'd give it a try. I was in the mood for a comfort food hearty soup and this one fit the bill for a cold chilly night. I laughed when I saw that apparently this soup serves 6. My husband and I (party of 2) helped ourselves to 3 and 2 servings respectively. ;0) We had just enough soup to pack up for 1 person's lunch the next day. Definitely need to double recipe to serve 4-5 generously. This soup won't disappoint! Martha Stewart Member Rating: Unrated 12/31/2012 this soup was great! My boyfriend raved. Really delicious and pretty too! Martha Stewart Member Rating: Unrated 12/08/2012 Will be making this as I found the recipe in EVERYDAY FOOD and it looks very good however,I almost missed it here on the site as it has ACORN squash pictures next to the recipe Martha Stewart Member Rating: Unrated 12/02/2012 Just made this tonight with some chicken sausage I had in the freezer. It was a great way to use sweet potato and we loved the swiss chard. I will definitely make it again. Martha Stewart Member Rating: 5 stars 11/30/2012 Absolutely love this recipe. I do half sweet sausage, half hot and it brings such a wonderful, flavorful kick to it. Definitely part of my regular winter meal rotation now.Martha Stewart Member
