  • 3 cups old-fashioned rolled oats
  • 1 cup raw pumpkin seeds, hulled
  • 1 cup raw sunflower seeds, hulled
  • 1 cup coconut flakes
  • 1 1/4 cup raw pecans, coarsely chopped
  • 3/4 cup pure maple syrup, preferably Grade A
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup packed light-brown sugar
  • Coarse salt

Directions

Preheat oven to 300 degrees.

Place oats, pumpkin seeds, sunflower seeds, coconut, pecans, syrup, olive oil, sugar, and 1 teaspoon salt in a large bowl and mix until well combined. Spread granola mixture in an even layer on a rimmed baking sheet. Transfer to oven and bake, stirring every 10 minutes, until granola is toasted, about 45 minutes.

Remove granola from oven and season with salt. Let cool completely before serving or storing in an airtight container for up to 1 month.

                This is a lovely recipe- my current go-to granola recipe. I make a big batch and give it to friends. Everyone loves it. Sometimes I add cinnamon and/or cardamom, sometimes not. But I always add dried fruits.

                We love this granola!  I increased the amount of oats to 4 cups, and reduced the maple syrup to 1/2 cup and the olive oil to 1/3 cup. Also eliminated the brown sugar and substituted 1/4 cup of Truvia Baking Blend.  The result is pretty much perfect.  I also add dried cherries after the granola is baked and cooled.  I make it the minute it runs out!

                Super good. I make this recipe almost every week (er, yes, we eat that much granola) with the following changes:
                1/4 c olive oil
                no brown sugar
                almonds instead of pecans
                
                I also line the baking sheet with parchment to prevent sticking.

                Where are the other 2 recipes that she had on the show?  I would like to make the Pistachio and Sour Cherry one, but don't know how much of each to put in.  Can you post that recipe also, please?
