Ingredients

Ingredients

  • 6 tablespoons unsalted butter
  • 2 medium yellow onions, chopped
  • 2 cloves garlic, chopped
  • 24 ounces canned whole plum tomatoes
  • 3 cups homemade or low-sodium store-bought chicken stock
  • 2 teaspoons sea salt
  • 1/4 teaspoon freshly ground black pepper

Directions

Melt butter in a large saucepan over medium-low heat. Add onion and garlic; cook, stirring, until onions have softened, about 15 minutes.

Add tomatoes, chicken stock, salt, and pepper; bring to a boil. Reduce heat to low and cook until tomatoes, onions, and garlic are soft, 10 to 20 minutes.

Working in batches, transfer soup to the jar of a blender and puree until smooth. Return to saucepan and place over medium heat. Cook until soup is heated through. If soup seems too thick, stir in some extra stock to thin. Serve immediately.

                Having grown up with Campbell's Tomato soup after a day sledding in the snow, this simple recipe is the grown up version and I love it.
                I added 2 tsp. of brown sugar with the onions
                I added 1Tbs. of uncooked rice with the addition of the tomatoes
                I warn, not to add any salt until the soup is finished cooking The canned tomatoes usually have a variable amount of salt in them.

                Love this recipe. It's very easy and is made with things I always have on hand.  I use vegetable stock to keep it vegetarian.

                Love this because it doesn't have sugar I it!  I made 2 substitutions:  A sprinkle of onion powder instead of onion and bottled vegetable juice instead of the chicken stock.

                I used olive oil instead of butter, fresh tomatoes instead of canned, veg stock instead of chicken, only half an onion, seasoned with dried basil.  And go get yourself an immersion blender, it's so much safer!  Very delicious!

                Outstanding! I added a little sugar, but that's just my preference. I used 2 cups of chopped sweet onions. I wasn't sure how big a medium onion should be, so I researched it, and the consensus is that a medium onion = 1 cup chopped.

                I carmelized the onions to a deep golden color instead of the quick method in the recipe, and I threw in a handful of fresh basil before putting it all in the blender. Delicious! My kids love it.

                Perfect tomato soup for this lactose-intolerant girl!  I do add some dill at the very end for a special taste. Even my husband who doesn't need to avoid dairy has requested this soup! Lovely!

                It won't taste like onions if you carmelize the onions, and carmelized onions don't taste like an onion.  It takes longer than 15 minutes though to do this.  More like 25 minutes.  Then it is an excellent soup.

                This should have been called Onion Soup.  Even after cutting back on the onions and adding more tomatoes, the taste was still way too heavy on the onions.  I will definitely keep searching for the best Tomato Soup recipe.

                The first batch I made seemes too oniony but on making it a second time I realized that I hadn't let the onions cook enough the first time. Totally a  fave at our house. Delish!!

                This was WAY to oniony (I'm sure it's not a word)!  I would just go with the tomatoe soup that actually has some dairy in it unless your diet cannot handle it.  The toast with the goat cheese spread was GREAT though!

                Our daughter, Danielle, sent us this recipe.  It is the most delicious and nutritious soup we've ever had.  Plan to make a larger batch next time.  Great with a Panini or Baguettes with Camp De Montalban Cheese.  It's a winner with us!

                ummm...I made the soup today after reading the comments~
                We just pureed the tomatoes prior to cooking and the onions after frying.
                Solves the whole problem of the blender exploding without buying another appliance. : )

                I have hated tomato soup all my life until I bought this one at Costco. It is the best!
                I can't believe they have given out the recipe, but I'm glad! It taste just like the one from Costco. i have also told all my friends about this and I was surprised at how many people were like in hating tomato soup. not to put Campbell down, but, it's awful!

                I've never made tomato soup because I never liked it.  I tried this and make it about once a week.  Love the taste, easy to make, and it uses ingredients that I have on hand. Quick-Easy-Good!!!

                This soup is great addition to my recipe collection.  It is easy to prepare and an Imersion blender in the sauce pan it also a great way to blend the ingredients.  I would like to know if this recipe freezes well.  this way I can send it to my daughter in college.

                it is a Sunday morning and i got up early to get my husband his tomato soup for his bus driving in the morning. i only had salted butter and had regular canned diced tomatoes, but i figured i would try it with what i had and just add less salt. well the soup blended up nicely (no explosions because my blender lid has steam holes) and my husband sent me many text messages that morning telling how much he liked it.

                Very easy and quite tasty.  I used 1 tablespoon of olive oil insted of the 6 tablespoons of butter to make it low cal and healthy.

                WELL Martha - I now know what your bleep said (on the air) with Katherine H. I said the very same expletive when the cooked  tomatoes exploded out of the blender and on to me, my new kitchen rug, the wall, fridge, vent fan, stove and counter tops....It might be wise to cool them a bit before blending....my blender became a volcano  twice.....I held on to the lid harder the second time and it still blew. The kitchen and I were  complete  disasters! 
                The soup however...was maaavelous darling

                the tomato soup i am seeking is a polish soup (starts with sch ???); it is a tomato based soup with small macaroni in it. can you help me??? or maybe (i hope) this is the recipe and all i have to add it macaroni.....i would love to serve it for her birthday ...... we lived in Hamtramck MI at the time, as you know a fully Polish city. i have many prized recipes but wasn't able to get this recipe . please help. thank s  love your show; watch every day.

                I think common sense is needed with the person that broke the blender. First off never pour extremely hot things into glass, second add a metal spoon to the glass and pour the hot liquid on it. The metal spoon will take up the heat and save the glass. Oh yes, in this persons case don't forget to take the spoon out before blending. Better yet buy an immersion blender!

                I have now made the soup many times since it aired - my 16 year old daughter said it as good as her favorite tomato soup at Nordstrom's.  Now that's a win!  I agree with the immersion blender - it came out perfectly and was less cleanup.  We have also added fresh chopped basil to the soup.

                The soup turned out nice and creamy, without any cream or milk.  Along with  other comments, I have to say the only way to make this is with an immersion blender - quick, easy, safe with hot liquids

                I traded out the butter for dairy free soy free margarine and it was THE most tasty soup!  Thank you for this recipe, Martha and staff!  My family avoids dairy so anything that tastes creamy but isn't is always an extra treat!

                Made this yesterday, added some fresh basil, and it was delicious!  Just finished the last bowl...added some leftover shrimp to it for some added protein and it was a great lunch.  I will definately make it again!  Also used the hand blender and it was so easy!

                I made this today.  Used one can of diced tomatoes and one can homemade chicken stock plus onion and chopped garlic and a chopped carrot.  Also added some chopped basil.  It was really good and will definately make it again.  The person that added the mushrooms and thyme sounds good.  Might try that next time.

                I made this yesterday for my mother in-law it came out great. Then I got smart and changed out the tomatoes for Mushrooms. I didn't use as much chicken stock and added Thyme. I felt happy after that bowl. ;o)

                I made this yesterday - I subbed the garlic for Roasted Garlic and increased the amount of pepper to close to 1 tsp.  I must say I found it too sweet yesterday (no doubt due to the garlic), but after having it today - wowzers!  Man what a great flavour!  I too, used the immersion blender and found it was simple and pureed up easliy

                This soup was really good. I followed the directions exactly except one half of the batch I added half a tsp of celery salt and half a tsp of seasalt it made a tasty difference. And went great with grilled ham and cheese on rye!

                I used the handblender and it worked great.  It was much easier than transferring to blender. The soup was simply delicious.  I added some basil and thyme and it was a hit.

                I think it might be best to use a hand blender right in the soup pan, so there would be no need to transfer the hot soup to another container.  How about that?

                I made the soup this morning.  When I began to use my old, plastic blender, the soup spewed out of the top, just like it did for Martha.  I contacted  MSL customer service and found that one should first "burp the lid while the blender is off to let steam escape."  Also, make sure to blend in very small batches.  Despite not liking the mess I had to clean up, I loved the soup and will definitely make it again!

                I  would highly recommend an immersion blender for many reasons but mainly safety and convience (less washing, less spillage, etc.)  Some immersion blenders are cordless!

                I am so glad that the blender did not hurt your child. You should never put a scalding hot liquid right into a glass blender!  I know that that is just a big rule of the kitchen. I am so happy no one got hurt!

                WARNING! Be very careful with this recipe! After I transferred the soup into the jar of my expensive blender, the jar cracked from the heat and scalded my arm.  This recipe should state before transferring into blender, to let cool.  Thank goodness my child was standing next to me.  This was a very expensive and painful failed attempt!

                Martha, Katherine Heigel looked like a beautiful Donna Reed coming down the steps in her crinoline lined dress...but your staff needs a spanking for not giving you an immersion blender for that hot soup!  


                    
                Made this yesterday, added some fresh basil, and it was delicious!  Just finished the last bowl...added some leftover shrimp to it for some added protein and it was a great lunch.  I will definately make it again!  Also used the hand blender and it was so easy!

                I made this today.  Used one can of diced tomatoes and one can homemade chicken stock plus onion and chopped garlic and a chopped carrot.  Also added some chopped basil.  It was really good and will definately make it again.  The person that added the mushrooms and thyme sounds good.  Might try that next time.  


                    
                I made this yesterday for my mother in-law it came out great. Then I got smart and changed out the tomatoes for Mushrooms. I didn't use as much chicken stock and added Thyme. I felt happy after that bowl. ;o)  


                    
                I made this yesterday - I subbed the garlic for Roasted Garlic and increased the amount of pepper to close to 1 tsp.  I must say I found it too sweet yesterday (no doubt due to the garlic), but after having it today - wowzers!  Man what a great flavour!  I too, used the immersion blender and found it was simple and pureed up easliy

                This soup was really good. I followed the directions exactly except one half of the batch I added half a tsp of celery salt and half a tsp of seasalt it made a tasty difference. And went great with grilled ham and cheese on rye!

                I used the handblender and it worked great.  It was much easier than transferring to blender. The soup was simply delicious.  I added some basil and thyme and it was a hit.

                I think it might be best to use a hand blender right in the soup pan, so there would be no need to transfer the hot soup to another container.  How about that?  


                    
                I made the soup this morning.  When I began to use my old, plastic blender, the soup spewed out of the top, just like it did for Martha.  I contacted  MSL customer service and found that one should first "burp the lid while the blender is off to let steam escape."  Also, make sure to blend in very small batches.  Despite not liking the mess I had to clean up, I loved the soup and will definitely make it again!  


                    
                To the person who burned their arm after she put the boiling hot soup into the blender:  You recommended someone putting a warning on the recipe to tell you not to put boiling hot soup in a blender.  Instead please use common sense.

                I  would highly recommend an immersion blender for many reasons but mainly safety and convience (less washing, less spillage, etc.)  Some immersion blenders are cordless!  


                    
                I am so glad that the blender did not hurt your child. You should never put a scalding hot liquid right into a glass blender!  I know that that is just a big rule of the kitchen. I am so happy no one got hurt!  


                    
                WARNING! Be very careful with this recipe! After I transferred the soup into the jar of my expensive blender, the jar cracked from the heat and scalded my arm.  This recipe should state before transferring into blender, to let cool.  Thank goodness my child was standing next to me.  This was a very expensive and painful failed attempt!
